I’ve never been super awesome at meal planning. But I really am trying harder; not only because it makes me feel a little less spazzed in the evenings after work, but it is also so much more cost effective!
So I’m thinking, if I can keep my act together, I’m going to start sharing my previous week’s meal plan with you guys on Sunday, just in case you’re still in need of some ideas. I know a lot of people share their meal plans on Mondays, but I tend to (at least try to) do my grocery shopping on the weekends so I’m always like, crap! Now I want that instead!
But anywho…here’s a look at last week’s meals!
Sunday: Hawaiian One Pan Pasta
This was really good but a bit salty. I’d say go with no salt added tomato sauce and low sodium meats if you can!
Monday: Burrito Bowls topped with avocado and sour cream
As I mentioned before, these were AMAZING. Lucas loved it too, and made a ton of leftovers.
Tuesday: Chili + Cornbread
This was leftover chili we had on hand but this recipe is a favorite of ours! Oh, and that cornbread? Ohmygodddddd. I will never use another recipe again. OBSESSED.
Wednesday: Spinach Stuffed and Bacon Wrapped Chicken with mashed potatoes and carrots
I ended up doing a slight variation of this recipe for the chicken and it turned out awesome (My substitutions: I used about 5oz fresh spinach and did 1/4 cup sour cream + 1/4 cup light mayo). This recipe is definitely a keeper!
Thursday: Leftovers
Friday: Out to dinner (I’ll share that tomorrow!)
Saturday: Pizzaaaaa

My favorite for the week was pecan encrusted white fish. Great flavor and very light and flakey!

Yum burrito bowls are the best! We make a version of that at our house too. My favorite for the week was spaghetti squash with sausage. So good, especially delicious on really cold days… and we have been having quite a few of those!

hello! i just made this bc yours looked so good. i followed all the directions, i used long grain brown rice as my rice… its been cooking and cooking and not soaking up all the liquid. it definitely doesn’t look like your picture above wahhhh. what kind of rice did you use when making?
