Weekly Meal Plan {11/13}

I’ve reeeeeeeally been slacking in the meal planning department these past two weeks.

I haven’t done a good, full grocery shop in a while and we’ve been relying on a lot of random leftovers and odds and ends to piece together meals lately. We really have no good excuse – I mean, yes, we’ve been busy. But no more so than usual, really. I just need to get my act together again!

At any rate, here are some of the meals we had this past week. They weren’t super exciting so I’m also throwing in some other ideas that we didn’t have (but would have liked to!) just in case you need some more ideas.

Sunday: Turkey soup with leftover corn muffins

This recipe made SO MUCH SOUP! I have some in the freezer and gave some away and there is STILL some in the fridge!

Monday: Baked chicken with leftover mashed potatoes from Friendsgiving and frozen mixed veggies (which weren’t that great)

The mashed potatoes were awesome – especially since there was also leftover toppings, too (hello, loaded mashies!)

Tuesday: I have no idea what we ate BUT I would have loved some burrito bowls (check out this post for details!)

Wednesday: Again…no idea what we ate. I may have had PB&J crusts for all I know?! But here’s a yummy idea for you – Hearty Italian Meatball Soup (details here!) with Cheesy Italian Quick Bread

I may just have to put this on the menu for this coming week!

Thursday: Pasta with homemade meatballs and sauce

The sauce was from a jar; the meatballs were the last of what was left from the batch I made with these freezer meals (<—great meal idea post!).

Friday: Baked Garlic Parmesan Chicken with rice and green beans

Jay took care of this entire meal from start to finish, including picking out the meal, stopping at the store to grab chicken, and preparing the whole thing. It was such a treat – I’m spoiled!

Saturday: Leftovers

I’m hoping that I’ll be able to start adding a couple of new elements to the weekly meal plan posts soon! But for now, I’m going to have to cut this one short – if you have any recipes that you’ve loved lately, leave ‘em below!! I need some new ideas Smile

    Yum! You food is making me feel guilty. I'm 37 weeks pregnant and have gotten SO slack with cooking healthy dinners for my husband and I. I really should be getting ahead of things but instead I'm getting lazier! Thanks for giving me a little motivation to get some food prep done for the week!
