Weekly Meal Plan {11/15}

Happy Sunday to you all!

Once again, I almost forgot to put together my meal plan post for this week…whoops!

We started off doing really well, with a few good, well-planned meals, and then the rest of the week finished up with some leftovers and dinner out. So here’s a look at what we ate!

Sunday: Grilled steak quesadillas with sugar snap peas

Monday: Homemade pizza on TJ’s garlic & herb crust with a side of broccoli

Tuesday: Fiesta Enchilada Casserole

This stuff was DELICIOUS, although I did make a couple substitutions to the original recipe (I had to use canned enchilada sauce — Sorry Jenn! — and I had chicken instead of beef on hand). I also took Jenn’s advice and cooked in two 9-inch dishes. One for now, and one went into the freezer for another time!

Wednesday: Crockpot Chicken Parmesan Soup w/ Cheesy Italian Quick Bread

The soup was good but I felt like it was missing some flavor and couldn’t quite pinpoint it. Other than that, quick and easy!

Thursday: Leftovers!

Friday: Out to dinner with Jay, Lucas, and my parents

Saturday: More leftovers…a random mix of leftover chicken and beef made into tacos with some noodles on the side

It was totally random and just alright…but it saved us money from ordering out pizza! ;)

    Our meal plan this week is all about using up some stuff in our fridge while testing out a few new recipes for the holidays!

    We love Trader Joe's pizza dough! My fav is the whole wheat which we had tonight. Steak quesadillas sound super delish! Random leftovers night definitely occurs at our house too. Sometimes you just gotta use up what you got especially with Thanksgiving coming up!

    Can I come over for dinner?! :D The meal plan looks delicious! My boyfriend got some tough news today so I'm making his favorite, tacos! Hopefully that'll cheer him up :)
