Weekly Meal Plan {11/29}

By Courtney 5 Comments

It’s meal plan Sunday!

I honestly didn’t really plan for all that much last week, knowing we had Thanksgiving during the week. I knew we were stocked with a few odds and ends, so I figured we’d just wing it and see what we could come up with. Here’s a look!

Sunday: Grilled chicken paninis with bacon and tomato, plus some roasted root vegetables on the side.

The vegetables came from a bag from Trader Joe’s, but I don’t think I cooked them long enough so they were just a little mushy and yuck. The sandwiches, on the other hand, were fantastic. We sure do love our paninis over here!

Monday: Hearty Italian Meatball Soup + garlic bread

Tuesday: Leftovers, no picture!

Wednesday: Grilled chicken with green beans and Trader Joe’s Sweet Potato Gnocchi (it’s seriously SO GOOD)

Thursday: Thanksgiving dinner, baby! Winking smile

Friday: Pizza night! We were going to do some leftovers, but neither of us felt like turkey. Then Jay mentioned Hawaiian pizza, and then that was all I could think of. So we ordered a Hawaiian pizza + some honey mustard BBQ wings. Honestly, wings usually aren’t my thing, but I’ll occasionally eat one or two (only the ones with two bones, not one!) and they were pretty good.

Saturday: Still undecided at this point, but most likely leftovers.

I feel like my desire to meal plan is weaning slightly lately, but with all of the holiday stuff upon us, I’m trying really hard to stay on top of it. I know I’ll be indulging enough with everything else, so I might as well make sure we’ve at least got some good dinners planned!

How about you guys? How’s meal planning going lately? Any good recipes to share?
