Looking back at last week’s meals, and I can tell you that they were all absolutely delicious. I can also tell you that we were severely lacking in the veggie department…I guess it’s a good thing I eat big salads for lunch most days. Ha!
Hey, it all balances out. We had a couple dinners out of the norm this past week, but overall, it was a good one. Here’s a look!
Sunday: Grilled chicken paninis with bacon, tomato, avocado, and provolone with roasted broccoli on the side
My parents had brought over some ciabatta rolls for us, and they were incredible for these sandwiches. SO good!!
Monday: Brinner! Kodiak Cakes Power Cakes + a scrambled egg
Tuesday: Slow Cooker Beef Teriyaki Lettuce Cups with jasmine rice on the side
That recipe was delicious and one that we would absolutely use again!
Wednesday: Date night out at Druther’s!
Thursday: Delivery pizza and boneless wings
We had our parents and my brother over that night to share the news of baby #2’s gender, so kept things simple and just had a pizza delivered.
Friday: Our original plan was to have some Crockpot Stuffed Pepper Soup that was leftover in our freezer, but I think we had left it in there too long and it just tasted all wrong. So we nixed that and ended up making some homemade guacamole and snacked on that while we figured out dinner.
Then, after browsing through the fridge, we wound up making some grilled cheese sandwiches with bacon and tomato.
It was SUCH a good sandwich!
Saturday: Friendsgiving! Details to come tomorrow.

Love so many of the ideas you share!
I’ve lost 40 pounds since being diagnosed with diabetes 3 months ago, and haven’t gone hungry once. Simply cut out white rice, sugar, white bread, most processed foods and added in lots more fresh produce.
On the menu this coming week: dal with brown basmati rice, spinach and garlic infused yogurt; lettuce wraps and fried rice; Amy’s pizza and salad; beef tacos and salad; Saudi inspired chicken thighs, zucchini and salad; lasagna and salad.
I’m looking forward to more inspiration!
