Well hello and happy Sunday to you all! How’s the weekend panning out so far? Good? Awesome?
I’ll tell ya, we had a super productive day yesterday, with getting all sorts of cleaning done, laundry, AND Jay got a huge portion of our kitchen table done! If you follow on Instagram then you probably already saw it, but hopefully I’ll have another update by tomorrow.
So in true Sunday fashion, I’m here to share last week’s meal plan with you all. Thanks to a couple meals that made a TON, we did leftovers a few times, which was a-okay by me because they. were. delicious.
Sunday: Burrito Bowls made with crockpot shredded beef, cilantro-lime rice, lettuce, tomatoes, corn, sautéed peppers and onions, salsa, and sour cream. AKA…heaven in a bowl.
I made the shredded beef that goes along with Kristin’s Crockpot Shredded Beef Enchiladas and assumed that we’d wind up making the enchiladas some time during the week. We seriously LOVE that recipe (it’s in my Top 10 Favorite Crockpot Recipes!), but we never got around to making the enchiladas. Instead, we made burrito bowls three times this week…
Monday: Brie & Pear Grilled Cheese Sandwiches with Arugula and Brussels Sprout Salad.
Another Blue Apron meal that knocked it outta the park (and one that could easily be recreated, too)!
Tuesday: Baked Spaghetti & Meatball Casserole
I made the meatballs for this on Sunday, which made putting this dinner together SUPER easy. I wasn’t a huge fan of the meatballs, but loved the spaghetti casserole part and have no doubt I’ll recreate this again…just probably with my mom’s meatball recipe.
Wednesday: Leftovers night #1 – another burrito bowl for me.
Thursday: Spicy Korean Chicken Wings with Rice Cakes & Baby Bok Choy
Woah, baby. Such unique, different, incredible flavors in this dish! Blue Apron, you continue to wow me.
Friday: Leftovers #2 – my third burrito bowl of the week.
Hey, if it ain’t broke, right?…
Saturday: I ended up doing a little grocery trip to Trader Joe’s, which resulted in a casual but delicious dinner, courtesy of TJ’s. Starting with tortilla chips and their reduced guilt guacamole (which is SO GOOD, I might add).
Along with their BBQ Chicken Pizza…again, another TJ’s favorite of ours!
And there ya have it! We’ve got some new items on the menu to try for the upcoming week, which I’m really looking forward to, along with a couple standby favorites.

I LOVE burrito bowls! While I’ve been at home the past couple months with my parents, I haven’t been doing much meal planning but I’m moving this week and looking forward to meal plan and prep again (am I a dork or what?) ;) I did make a delicious omelette this past week which I topped with avocado and salsa…oh man, it was so good!

I love when we have tacos because I know lunch the next day is going to be a WIN! I have a serious affection of taco salads …I like them so much more than tacos haha, something about getting all the flavors on one forkful is just the best! :D
Menu this week? Undecided. As usual. Still can’t meal plan. (It’s so hard when stores are closed on Sundays :( )

That korean chicken looks awesome. Do they heat up well? My husband would devour them all, though, so not sure if we’d have leftovers, hah!

Great menu options! The Korean chicken looks really good! I’m about to get some pork ready for the crockpot for tonight. Then need to do a little grocery shopping.

Those 2 Blue Apron meals look incredible! And TJ’s definitely has the best frozen pizzas, I need to try that BBQ chicken one!
