Happy Sunday!
I hope you’re all having a great weekend and enjoying it to the fullest. We’ve been battling the teething monster a bit over here this weekend, but other than that, things are going well. We were out for a good part of yesterday, and today I’m hoping to be able to spend some time at home catching up from the busy week we had last week.
On Friday, I ordered our groceries online and Jay took care of picking them up yesterday, so that was a huge load off…it is SUCH a great feeling to wake up on a Sunday and know the grocery shopping is done! Then again, maybe that’s just me…?
I’ve still got some prep to take care of today, but I can handle that. As for the meal plan though…here’s a look at what we had on tap last week! Because I was out 3 out of the 5 nights, it’s a little sparce, but I’m filling it in with some other favorite recipes for anyone who may be in need of some ideas this week.
So…here’s a look!
Sunday: Grilled chicken sausages with french fries and green beans
Monday: Turkey Chili Mac (recipe to come tomorrow!)
It was my first time making this and it was definitely a hit!
Tuesday: Crockpot Shredded Beef Enchiladas via my girl Kristen
These were a HUGE hit with both of us, but especially for Jay. As he said, “These are perfect. Just beef and cheese. None of those crappy beans.” Ay yi yi.
Wednesday: Company Party – no dinner planned. I planned the earlier dinners in the week so the boys would have leftovers and it all worked out.
Looking for a recommendation? How about some Chicken, Bacon, and Ranch Mac & Cheese or Italian Style Tomato and Meatball Soup w/ some Cheesy Italian Quick Bread?
Pretty sure that will be on a meal plan in the very near future!
Thursday: Girls’ Night out at Bombers so no dinner planned. Boys had leftovers again, and I ate a delicious pulled pork burrito and nachos.
BUT, why not stick with the Mexican theme here? How about trying some Healthy Taco Salads with Creamy Cilantro Lime Dressing this week. They’re wicked easy, filling, healthy, AND delicious.
Friday: Jay’s company party, so no meal planned. But hey, it’s Friday, so order some takeout and take the night off. You deserve it.
Saturday: Pizza with Sarah & Jeff (I’ll show you guys this crazy thing tomorrow!)

wow, you’re amazing, working fulltime and meals like that! If I didn’t have the flu I’d be drooling now! Jay is a lucky man! Sad to say, I’ve got nothing to offer. I think my hubby’s going to be on his own for the next few days.

We are moving this week, so it will be alot rummaging through the food we have left and eating out. Pasta and cheese looks like its going to be on the menu alot.

I just have to say that the annoying stay free ad popping up all over the screen while I am trying to read your blog is beyond annoying. I don’t mind ads but this one is ridiculous.

Buying groceries online? It sounds significantly easier, though I do have to admit, going to the market is kind of fun for me. Does that make me strange? Agh, oh well! I tend to be picky eater, but EVERY meal on here looks delicious. If only I had a well functioning kitchen to cook in (oh, life in a dorm), I would definitely be trying these recipes out! Next time I am home, I am making a batch of enchiladas.

Haha sometimes it’s easier, sometimes it’s not. I like to do it when I know exactly what I need and don’t need to browse. But sometimes it is more fun to just shop! It was also much easier before Lucas, too, haha ;)

Ahh, meal planning. lately I’ve been getting so bored with it! I like the idea of remembering simple meals like the chicken sausages with fries and veggies. Easy, peasy and something the boy will love, too!

So thrilled to see you are using the meal planning section of your KIT planner! It really does help set the tone for the week to schedule everything out. I’m a couple of days behind on my blogs as we were in the Bahamas last week (poor me! :-) but I agree with all the others that the Chili Mac looks and sounds great. I saw the recipe on your subsequent post and have it marked for Super Bowl Sunday. Looks easy, hearty and easy to “jazz up” with toppings and such. I like it!!!
