Happy Sunday to you all! I hope you’re all having a wonderful weekend – doing anything fun or festive??
We had a family Christmas party last night, so I’ll share some details of that tomorrow. Today we’re having some cousins over to watch some football (just like we used to have our regular Football Sundays!) so it should be a fun day!
Of course, since it’s Sunday and all, I’m sharing last week’s dinner menu. Here you go!
Sunday: Leftovers (pretty sure it was leftover Cheeseburger Soup from last week!)
Monday: Pulled BBQ Pork on leftover slider buns with seasoned potatoes and green beans
I actually found the potatoes at Target in with the produce and they were SUPER easy and totally yummy. I can’t seem to find them online to link to, but they came in a microwaveable container where you just need to add the seasoning packet and some butter. Would definitely buy ‘em again!
Tuesday: Baked chicken with Parmesan Rice and green beans
Jay cooked this entire meal from start to finish (and also surprised me with the rice recipe) and it was absolutely delicious. Especially the rice!
Wednesday: Potato Chowder with Cheddar Cheese Toasts
I decided to have a Blue Apron delivery this past week (paid for ourselves, not sponsored) based on the menu, and this meal did not disappoint! The chowder was actually quite spicy, but had amazing flavor.
Thursday: Pasta with sauce, homemade meatballs, and garlic bread
I actually found and used this meatball recipe and it was awesome. Not quite as delicious as my mom’s homemade meatballs, but definitely good.
Friday: Harissa Chicken Skewers with Khorasan Wheat and Persimmon Salad
This was a meal that we’d absolutely never make on our own, but it was good! Jay isn’t a huge lover of kale, but I thought it was great. And I think it may have been one of my first times trying persimmons?? Yum!
Saturday: Family Christmas Party!

Five ingredients or less fave: Mozzarella baked chicken. 1 lb. boneless skinless chicken breasts, ~1/4 c. flour, 2 T. butter, Portobello mushroom slices, slices of mozzarella. Dredge the chicken in flour, season with salt & pepper, and brown in melted butter. Remove chicken and set on a broiler pan and sauté mushrooms in leftover butter. Place softened mushrooms on top of chicken and cover with mozzarella. Broil till bubbly. Ta-da! Always surprised by how delicious it is :)

We had those chicken skewers last night and thought they were awesome! It was so different, which I loved. We are having the chowder tonight and after hearing its yummy I am even more excited. Love Blue Apron weeks!

5 ingredients or last: romaine lettuce, black olives, mayonaze, Pam butter spray and the phone number to the pizza spot of your choice. Toss 1st fore ingredients out da window and swerve in 30 mins! Fine paper plates and plastik cutlery optional
