Weekly Meal Plan {12/13}

Hellooo and happy Sunday to you all! How’s the weekend treating you so far? Good, I hope!

So we totally lucked out on the meal planning front this week. My grocery haul for the week consisted of about 10 things, none of which were any sort of ingredients for making or preparing dinners throughout the week.

Luckily, we had leftovers on Monday night from the weekend, and I also had a dinner date planned with my girlfriend, Sarah, on Tuesday, so I knew we didn’t need dinner that night (Jay managed with more leftovers).

Yesterday we had a family Christmas party, so dinner was going to be taken care of there.

As for Wednesday, Thursday, and Friday? Blue Apron to the rescue!

Wednesday: Roast Chicken & Potato Latkes with Savoy Cabbage & Apple-Mustard Chutney

This meal was one that we were probably the least excited about. No particular reason, but I guess the ingredients just didn’t really ‘wow’ us from the recipe card.

Well, the meal certainly proved us wrong. First things first, have you guys ever tried celeriac? It was the strangest thing…almost like celery + a potato combined. Oddly delicious!

So you guys know about Blue Apron by now, right? I mean, if you’re a regular reader then I’m sure you are! ;)

But just in case you’re not, let’s talk about my favorite things about Blue Apron. First things first, the recipes are amazing. I’m fairly certain that every single time we’ve had a Blue Apron delivery, we wind up with something completely new to us (whether it’s an ingredient or full recipe) which just makes dinner that much more fun.

On top of that, the fact that you get everything delivered right to your door in exactly the right proportions just can’t be beat. I swear, I’ve had recipes on my Pinterest boards or bookmarked in magazines for months now, but because they have 1 or 2 ingredients that I don’t have (and really don’t feel like buying again, because…when will I use them again?!) I never make them. With Blue Apron, you get to explore all types of different cuisines, ingredients, and cooking methods without the risk.

Thursday: Harissa Lamb & Beef Burgers with Roasted Carrot Fries

Jay was alllll excited when he saw there were burgers in our delivery, and then he saw the word lamb and got all weirded out on me. I told him, hey, too bad buddy! You’re eating it! And ya know what?

These were some serious burgers, too. Just look at those things!

Again…would I ever buy lamb at the grocery store? Probability is a no. But we still got to try it with Blue Apron!

I mean, Fridays are always good for pizza, but this was totally outside of our normal “cheese with peppers and onions” or “Hawaiian” orders. And not to mention…absolutely freakin’ delicious!

    Knives. And my set isn't even that great- the ones blue apron has look much better! I think I almost cut my finger off everytime I try and cut a sweet potato!

    Hi Courtney, I hope this doesn't come across as negative in way way against you (I love your blog!) but after searching for quality pans for months I thought this may help someone else. For those that are sensitive to eco concerns, the Scanpans are actually a bit misleading. I bought a set a few years back thinking I was making my kitchen more "green" only to find out after doing more research that there are quite a few problems with the coating on them anyway. I've since switched to a different brand. I just think it would be a shame to spend a good deal of money on a product that doesn't live up to the claims. Thanks so much for your blog! Once again, I don't want to come across as nitpicky but if someone had let me know to look further into some of the eco claims on this type of pan it would have saved me hundreds of dollars!

    The arugula on that pizza sounds incredible. I'm a total klutz so an apron is definitely a kitchen staple for me. Also, a good sharp knife. Thanks so much for the giveaway.

    A box grater has been a great addition to my kitchen-freshly grated cheese is not only cheaper, but tastes sooooooo much better than pre-shredded cheese!

    That lamb burger looks like something straight from a high end burger joint! I cannot believe you made that in the comfort of your home. Love that Blue Apron brings gourmet to your kitchen.     I buy lamb mince quite a bit!! Makes amazing meatballs too and also great in a bolognese or a moussaka!!! I LOVE slow cooked lamb shoulder in a curry or shepherds pie too!!!

    My wife and I would love to have this pan to cook our family healthy dinners! I am often asked to cut the big items like spaghetti squash and watermelon, so I'd have to say the knives are my kitchen staple.

    The french baking dish would be my staple! I make a lot of easy meals where I just have to throw everything in a baking dish and put it in the oven!

    A good baking dish so that I can steam/roast lots of veggies and just store them in my fridge. I bring tupperware full bowls to stack on to get me through my workday at the hospital!

    I use a nonstick fry pan on an almost daily basis for cooking all sorts of things. One of my favorite ways to use it is to brown onions in butter!

    My husband and I have been loving Blue Apron too!! We've been getting deliveries almost weekly since July and are both big fans. We actually had the same three dinners this week! He wasn't a fan of the pizza, but I loved it so more for me! :) Anyway, I would love a new pan to make all our meals in, but "the kitchen drawer" set from the website is very nice too and would be a great addition to the items I already use most often when cooking.

    A large maple cutting board is a must! It is so durable and my favorite time to use it is for chopping vegetables for a stir fry!

    I could a new chefs knife but my kitchen staple is definitely a nonstick pan since I use it for everything- eggs, scrambles, quick sautes of protein and veggies(eg. chicken sausage with peppers), and the list goes on!

    I am constantly using a half sheet pan - to roast veggies, make cookies, and cook protein. Love it. I am able to use it for so much in cooking.

    I would have to say, the staples for me are a non stick pan, metal mixing bowl and wooden spoons, I use them every day, I don;t know why it seems so much nicer to stir my recipes with a wooden spoon, maybe its because the remind me of my gram :)
