Weekly Meal Plan {12/20}

By Courtney 6 Comments

Hello! Happy Sunday to you!

How are we seriously only 5 days away from Christmas? Really…how is it possible?!? I wish I could say I’m finished with shopping and wrapping but, alas, I still have left myself with a few last minute gifts to buy. Now hopefully I can finish up by completely avoiding the mall!

So, of course, it’s Sunday. So here’s a glimpse at last week’s meal plan. I’d say we were about 50/50 on being prepared, but we did have a few amazing meals during the week, with plenty of leftovers to spare.

Sunday: Homemade chili with cornbread

Gahhh, I just. love. cornbread.

Monday: Out t dinner at Buca di Beppo for my brother’s and dad’s birthdays!

Buca di Beppo

Tuesday: Burrito Bowls topped with avocado and sour cream

We seriously LOVE this recipe over here.

Wednesday: The most AMAZING Crockpot Chicken Wild Rice Soup + fresh baguette (from Panera) on the side

Thursday: Leftovers (burrito bowl again for me)

Friday: A random assortment after realizing the restaurant we wanted to order takeout from (our beloved Testo’s…ohhh, I miss their pasta fagioli!) doesn’t deliver as far as us.

It included some leftovers chicken dish, mashed potatoes, and carrots. It wasn’t amazing, but it was free. Winking smile

Saturday: Party food at my parents’ house + some delicious chili, courtesy of my brother.

And there’s that!

Oh yes, but before I go! The winner of last week’s Blue Apron giveaway! Congrats to the lucky winner, Ashlee!

BA win

Congrats, Ashlee! Please email me with your shipping info at sweettoothcourtney at gmail dot com so I can get you hooked up with your goodies!

Enjoy the rest of your Sunday, everyone! You likely won’t be seeing a meal plan post next week with the holidays, but I’ll still see you tomorrow. Smile

Burrito bowls are my fav meal...whatever time of the day! I use cauliflower rice to keep it grain free and nothing better than leftover shredded beef, pork or chicken for throwing on top! : )
