Happy, happy Sunday, everyone! Hope everyone is enjoying the weekend so far.
As promised, here’s a look at our meal plan from last week – maybe you’ll find some ideas for yourself this week!
Sunday: Veg-Filled Sloppy Joes with French fries
(we were going to add green beans but figured we already had veggies in the sloppy joes)
Monday: Creamy Crockpot White Chicken Chili with my favorite cornbread
Tuesday: BLT’s with side salads

Wednesday: I was out to dinner with my girlfriends so Jay and Lucas had leftovers. But if you’re in need of a recommendation, why not make Wednesday a pasta night?? Both my Skinny Chicken & Broccoli Alfredo and Tomato & Butternut Squash Mac ‘n’ Cheese are favorites over here!
Thursday: Honey BBQ Chicken Enchiladas with green beans
Jay and I actually weren’t huge fans of these. I like the homemade bbq sauce that the recipe calls for, but it was pretty sweet for enchiladas and there was way too much (I didn’t even use all of it either).
We both agreed we liked the idea of them (super quick and easy with ground chicken!) but maybe try with a less sweet bbq sauce, and less of it.
Friday: Pizza party with Lucas’s babysitter, her son, and husband (so much fun!)
Saturday: Wing it (i.e., we wound up getting Chipotle)

Coming into the last week of my Whole30! This week I’m having chili lime chicken thighs, homemade fish pie, chicken curry and Moroccan meatballs. Some solid noms ahead :)

I probably wouldn’t enjoy sweet enchiladas either! That is great you are close with your babysitter!

Omg, everything looks and sounds good! My daughter and I would chow down on everything but unfortunately my husband just won’t eat veggies like that :/ our menu for the week is NOrth Carolina style pulled chicken sandwiches and fries, hamburgers with broccoli Mac and cheese, fried chicken for husband and chicken sauté with onions and bell peppers for me, taco soup, and baked chicken with sweet chile sauce. No where near as yummy as your week sounds!!

You have such a good variety in terms of meals! I think I want a BLT right now. This week includes pork with blueberry compote as well as burgers and a chicken dish. Plus all the guacamole I made in preparation for next week’s Super Bowl. :-) Have a great Sunday!

Thanks for the ideas. These are great. I had totally forgotten about Sloppy Joe’s until recently and definitely never thought of it being something I could add a lot of veggies to. I saw a lentil Sloppy Joe’s recipe this week that I also can’t wait to try!

On the menu for me this week? Oh, maybe a couple frozen meals, a swipe into the dining hall, and out to eat a couple times (can’t complain when there’s a Chipotle a 20 minute walk away!) Oh, college life :)

That’s what I was going to say!! BLT’s are SO easy & SO good, but I never think of them when it comes to quick weeknight meals!!

Still loving those adorable soup and sandwich plates/bowls you have. I know you got them some time ago and have blogged about them before. But they are so darn sweet – they “elevate” casual dinner for sure. Don’t ever let your boys drop and break them – they are so cute!!

Surprised that the BBQ enchiladas didn’t turn out so well – it sounds like such a good combination! Lots of yum food on the menu this week, I did a blog post on it too – my fave is probably the fish pie I made! :)

Love these meal plan posts! I always try to plan our meals out for the week – and we typically stick to the plan – but I definitely need some new things to add to the rotation.
