Hey guys, how’s the weekend going so far??
We’re certainly keeping busy over here, and looking forward to having a couple friends over later this afternoon to watch the Jets/Giants game. I’ve got some chili in the crockpot and we should be ready to go!
But for now, here’s a look at last week’s dinner menu.
Sunday: Sirloin steak with roasted potatoes and green beans
I forget where we found the recipe, but it had a sort of onion “sauce” to go with it, which turned out to be very un-sauce-like, but not bad in the flavor department.

Tuesday: Fiesta Enchilada Casserole with green beans.
This was the second pan from when I made it a few weeks ago that we took out of the freezer for a quick and easy dinner.
Wednesday: Light ‘n’ Easy Cincinnati Chili (a favorite!!)
Thursday: Grilled chicken with baked sweet potatoes and…more green beans.
Jay surprised me with this dinner as I got home from baking cookies, which was a nice surprise!
Friday: Pizza + wings, which weren’t all that great (tried ordering from a new place…ahh well!)
Saturday: Pulled BBQ Chicken w/ shredded cheddar with tater tots and green beans
We were *this close* to ordering out again, but wound up pulling this together, thanks to some of our freezer stash. Hey, nothin’ fancy, but it worked!
What do you guys think…do we need to mix up our veggie selection or what?!?

Greens, sweet potato and roast chicken…I could it eat it every day! I’ve been using my crock pot loads this week though…lamb shoulder, chuck beef and today I’m sticking a pork shoulder in there!

We do the same thing and have salads on the side all the time. I want to mix it up with asparagus, squash, green beans and other roasted veggies but I guess it’s habit to keep having the same.

Your whole week of food looks amazing! These are the kind of meals I hope to create for my family one day, so I love love love seeing these posts!
As for a variety of veggies: I’m always a huge fan of corn on the cob or some steamed broccoli! :)

Baby likes green beans huh?!?! haha I am 22 weeks and have went through two jars of olives this past week! I want all the olives and all the meats!
