Hello and happy weekend to YOU! How are things? Everyone having some fun?
Thankfully, our weekend has turned out better than we had expected. Lucas’s fever broke overnight Friday into Saturday, and he was immediately SO much more like himself. He’s still on the mend with a bit of a cold now (which I’m sure is just a matter of time before it makes its way to me), but for now, we’re doing well. And we’ve been able to have a few low key birthday celebrations, too!
But of course, it’s Sunday and all, so let’s talk meal plan. Here’s a look at our meals from this past week which, I’m not gonna lie, were all pretty darn delicious.
Sunday: Cheesy Skillet Gnocchi with side salads
Monday: Better Than Takeout Chicken Fried Rice
This recipe is amazing, and one that we first tried when we were living with our friends Kanika and Shaheen. Only this time, I held off on the siracha.
Tuesday: Chili stuffed sweet potatoes with side salads
This is a meal that Jay and I used to eat ALL the time a couple of years ago, and after being reminded of it, I decided to bring it back. Even better, we had some chili in the freezer so it made putting together this meal beyond easy. Oh and, well…CHEESE.
Wednesday: Last minute frozen grilled chicken pesto pizza
I was actually supposed to go to a dinner with co-workers Wednesday night, but since Lucas wasn’t well, I decided to stay home. And because we didn’t have anything planned for that night, we dug through the freezer and found this pizza from Target. It was good, nothing amazing.
Thursday: Slow Cooker Cheesy Chicken and Potatoes topped with avocado and a side of green beans
Friday: Another change of plans night…we were supposed to go out with friends to celebrate my birthday but had to cancel due to Lucas being under the weather. We thought about ordering something to be delivered, but then Jay offered to stop at the store on his way home to cook a fresh meal. And that he did! Seared sirloin with homemade garlic mashed potatoes and some veggies.
Saturday: Out for birthday dinner! More details in tomorrow’s post.

Glad he is feeling better! Last week I brought back quesadilla into my life in like 15 different forms including breakfast (I stuck a zucchini quiche inside it), lunch/ dinner with chicken! I was obsessed!

I am so impressed by your ability to plan and cook meals each weeknight! I hope to be the same way one day, but for now I tend to plan on a day-to-day basis. Your meals all look yummy!

Happy birthday! That birthday dinner looks like hazelnut chicken?? Yum!! And we def need to try the fried rice.
I just brought a great taco bake back into our rotation… Brown a pound of hamburger or ground turkey, add can of tomato soup, packet taco seasoning (i use penzeys mix) and small can chopped green chilies and simmer. Add 2-3 cups cooked rice, spread into pan, top w chopped tomatoes and shredded cheese and bake. Sometimes I add beans or corn to the bottom layer and we serve w sour cream and/or chips. So easy to make the night before too and just heat up after work!

I had a pretty good week last week! It was my first week back to work after maternity leave and we all survived! :) My favorite was the beef taco bowls I made. Making them again this week!

We made your Cincinnati Chili last night for dinner and it was a big hit for our whole family, including our 2.5 year old! I’ve made it with a seasoning packet before, and yours was just as good with the added benefit of no extra additives. Thanks!
