I feel like I semi-fell off the meal planning wagon this week. Go figure, right? After just patting my own back last week! We got a little lazier with our meals this week but ahh well, what are ya gonna do? It happens!
I had some plans fall through on Tuesday this week (when I had no meal planned) and then on Thursday Jay went out snowboarding with his cousin and I didn’t feel like cooking for myself. But other than that, now that I think about it, I guess we did alright over here. So scratch what I said before and let’s take a look!
Sunday: Lemon Shrimp with Garlic & Herbs + Avocado New Potato Salad
The shrimp was actually another one of the Bumble Bee SuperFresh meals that I got a couple of weeks ago, and again, we were totally impressed. I will absolutely be buying more of those meals!
Monday: Stir-Fried Chicken in Lettuce Cups + jasmine rice with salsa
Amazing, amazing meal. The chicken lettuce cups were delicious, although the lettuce I bought wasn’t all that strong and things ended up getting rather messy. Next time, I’d also probably add in maybe some dinner rolls or another veggie because we were both pretty hungry shortly after eating dinner.
Tuesday: Leftovers/clean out the fridge of whatever we could find.
Wednesday: Lightened Up & Loaded Spaghetti Pie + side salads (unpictured)
That meal has been on my meal plan for the past two weeks and we FINALLY got around to making it! I made it with ground chicken and veggie spaghetti, and mmm mmmm, was it good!
Thursday: Leftover spaghetti pie for me (but our original plan was to make Easy Crockpot Chicken and Biscuits)
Friday: Out to dinner at Bonefish Grill…amazing!

Saturday: A “romantic” Italian dinner in…with Testo’s takeout. We’re fancy like that.
As of right now, I have no meal plan set for the coming week, so it’ll be interesting to see how it goes. That said, feel free to share some of your favorite, quick and easy weeknight meal ideas!

I remember you sharing about Testo’s in the past and I don’t blame you! It always looks so delicious. AND you got to save yourselves from the craziness of restaurants on Valentine’s Day :)
