Hello and happy almost-the-end-of-February to you! Is it just me or did this month seem to fly by for anyone else?!
So hopefully the weekend is treating all of you well, and maybe you’re checking in because you’re looking for a little meal inspiration for the week ahead. Well if that’s the case, I’ve got a few ideas for you!
We did wind up getting takeout twice this past week, but hey, sometimes it happens. Either way, it was all delish, so here’s a look at what we ate last week.
Sunday: Crockpot BBQ Pulled Chicken + scalloped potatoes + salad with the family
Monday: Leftover One Pot Lasagna Soup – which was clearly just reheated in the microwave, if you couldn’t already tell by the splattered bowl.
A reminder: I made it in the crockpot this time and it was SO good! Cooked on low for 8 hours and substituted 2-1/2 cups small shells for lasagna noodles, added in 30 minutes before eating.
Tuesday: Takeout Hawaiian pizza (x2.5)
Wednesday: Totally unfancy and very simple — grilled chicken + Low Fat Crockpot Veggie Stew (<—one of my best performing recipes on Pinterest AND the post just got a bit of a makeover, so check it out!)
Thursday: Crockpot Mexican Chicken over Rice – recipe coming soon!!
Friday: Takeout…again. Our favorite grilled chicken salads from LaBella’s.
Saturday: Greek Baked Ziti
It may not be totally photogenic, but WOW, it was delicious! Seriously, SO good. And the recipes makes a ton, so I split it into (2) 9” baking dishes and froze one for another time.
Really though…it was so. darn. good.

Wow, all those meals look sooo good! That crockpot Mexican chicken over rice looks amazing, can’t wait for you to post that one.
This weekend, we had a gas leak so our gas is turned off for a few days = no stovetop. I was thinking about breaking out the crockpot. I’ve been dying to try your one pot lasagna soup, so this really may just be the week to do it! :)

Hi Courtney! I have been thinking about making the crock pot lasagna soup for ever and am finally planning to this Friday. Question for you – did you brown the meat before putting it in the crock pot? Also, when did you add the cheese? Thanks!

Hey Sara! Yes, I definitely brown the meat before putting it in the crockpot. And I added the cheese in the last 30 minutes of cooking! Enjoy! :)
