Say whaaat? A meal plan post?!
I know…it’s been well over a YEAR since I’ve last shared one of these. Crazy.
I honestly have no idea if I’ll be able to stick with it being a weekly thing, but right now, I’ve definitely got the motivation to try. So we’ll see how things go from here!

Sunday: Taco Chili Pasta Bake
This recipe was sooooo good. Lucas wouldn’t try it, but Alex devoured it. Plus, it gave us lots of leftovers for during the week, too!
Monday: Healthified Crockpot Beef and Broccoli
I had actually sworn we’d used this recipe before, but we must not have because it really was not very good (hence the reason I’m not linking to a recipe). It had very little flavor and was just really disappointing (booo!).
Tuesday: Crockpot Pulled Chicken with homemade guacamole and tortilla chips
The boys both had some chicken and guac, plus some buttered noodles, although Lucas enjoyed his way more than Alex on this particular night! I had every intention of putting together salads to balance out the meal a bit, but we got behind schedule and, well, that’s just how it goes sometimes. We’ve actually been using and totally loving THIS RECIPE from Paula Deen for the pulled chicken. Even though her recipe is for pork, it’s totally interchangeable and we’ve used it quite a few times now.
Wednesday: Out to dinner with the girls at Slidin’ Dirty!
Thursday: Grilled chicken salads with lots of veggies
Jay had to work late on Thursday so I baked up some chicken and served that to the boys along with some broccoli veggie tots (we get these) and oranges, and I served some chicken for myself mixed up with some much needed veggies.
Friday: Takeout pizza x2 – peppers and onions toppings, always a favorite <3
Saturday: Homemade cheeseburgers with sautéed onions and green beans on the side
The boys both shared a burger (no bun) and had the green beans and some cheese. Now that we’re approaching warmer weather (I can only hope!?!) I definitely foresee more burgers and grilled items on the menu. Ahhhhh, spring <3

That pasta bake looks amazing!!! I actually keep your Chicken Parm burgers on a regular rotation in our house, probably will be making those bad boys this week actually :) Thanks for sharing!

I love your meal plan posts and find myself going back through them frequently. Please keep it up! I am in the process of moving this week so no meal plan here and SO ready to get back to it ASAP.
