Knowing that tomorrow is Easter, I decided to share this past week’s meal plan with you all a little early!
Of course, you can always feel free to check out the archives of the meal planning posts – I consult them quite frequently myself.
Here’s a look…
Sunday: Dinner at my parents’ house – grilled chicken, roasted potatoes, and salad (x2)
Monday: Healthy Chicken Parmesan Burgers (always a favorite!) with green beans
These are always a win-win because the boys really like them, too. I used to make them as meatballs for them, but now we just make a couple of smaller patties for each of them and it works really well.
Tuesday: Grilled sirloin with Easy Oven Roasted Potatoes (<– another favorite recipe of ours!)
The steak was good, but would have been much better if we had grilled it outside on the regular grill. Unfortunately, Tuesdays are our busy night (for now that it’s still Jay’s bowling night!) so the fact that we did anything other than something that’s ready in 20 minutes was impressive enough.
Wednesday: Slow Cooker Fiesta Ranch Chicken served over lettuce, tomato, and, cheese with tortilla chips on the side
The chicken recipe was pretty good! I think next time I’d want to put it in a burrito/taco, or maybe even in a panini, but it did have good flavor. The boys weren’t big fans of it, unfortunately.
Thursday: Chicken, Bacon, Ranch paninis with green beans (yes, we love green beans)
Jay surprised me by making this meal entirely from start to finish while I played with the boys, and it was such a nice treat to not have to think about what to make/do for dinner! The paninis were huge, so I wound up eating half for dinner and saved the other half for lunch the next day.
Friday: Chicken Fajita Roll Up from Applebees
Jay and I had a couple of gifts cards so after taking a quick trip to Lowe’s with the boys, we decided to stop by Applebee’s for a quick dinner. And, just as we suspected, we wound up running into my parents there! So they joined us for our meal and it was actually a REALLY awesome meal out with the boys (and my parents!).
Side note, that chicken fajita rollup has gone totally downhill. It used to be my go-to item from there (like when Jay and I used to go in high school ALL the time…) but it really is just not what it used to be. Womp womppp.
Saturday: TBD!

Nope, we just have a couple different frozen steambags that we like and we stock our freezer with ’em lol ;)

Your meal plans are always so simple, I don’t know why I have such a hard time with it! Ha! I need to make your chicken parm burgers, I feel like I’ve heard so much about them!
