Happy Sunday to YOU! Is the weekend going great?
I almost didn’t bother posting a meal plan today because we had a few days of leftovers and takeout, but the meals that we did prepare were pretty delish, so I figured I’d go ahead share ‘em anyway. So let’s take a look!
Sunday: Cheesy Chicken and Rice Casserole — be on the lookout for this recipe this week!
Monday: Leftovers from Sunday
Tuesday: I already shared this one with you guys on Friday. I’m not proud, but I have no regrets.
Wednesday: A pasta skillet bake made with lean ground beef and hidden veggies
It was my attempt at changing up a recipe I found in one of our cookbooks, and it was good, but not amazing. If I get it to amazing, then I’ll share!
Thursday: Adobo-Style Chicken with Roasted Bok Choy & Jasmine Rice
Jay and I got a Blue Apron order delivered this week (which we had actually forgotten about – surprise!) and this was the first recipe we cooked up. It was really good!
Friday: Takeout pizza because…Friday.
Saturday: Party with friends!

That Shepherd’s Pie looks fantastic! Wellllll I know that I’ll be having leftover pizza from lunch tonight, but I’m hoping to find some healthier options for the rest of the week. Gotcha have a cheat weekend every once in a while I guess :/
