Weekly Meal Plan {3/27}

By Courtney 8 Comments

Hey, better late than never, right?!

Today has just been such a great and BUSY Easter Sunday that I’m just now sitting down to my computer to type this up. I wouldn’t be surprised if there’s nobody even out there reading at this point, but I’m still sharing it anyways because we had a few pretty good meals this past week. So here ya go, and I’ll catch up with you all again tomorrow to recap our Easter weekend!

Sunday: Roasted Red Pepper Pasta with grilled chicken

I used another recipe for inspiration but ended up making my own spin on a new version, so I’m planning on sharing that with you guys soon. It was SO easy and so good!

Monday: BLAT’s with french fries

IMG_2701

It had been wayyyy too long since I had a good BLAT (bacon, lettuce, avocado, tomato).

Tuesday: Crispy Baked Honey Garlic Chicken over jasmine rice with green beans.

IMG_2725

Oh my goddddd, this recipe was SO good. You guys absolutely need to try it!

Wednesday: Cheeseburger Casserole with side salads

IMG_2730

Thursday: Leftovers

Friday: Homemade pizza!

Saturday: Five Guys…talk about a major pregnancy craving fulfilled.

IMG_6236

A “little” cheeseburger with french fries for me, a burger for daddy, and a hot dog with french fries for my little guy.

We all left full and happy. <3

Alright my friends, I’m outta here for tonight – catch ya tomorrow!

Looking forward to the Roasted Red Pepper Pasta with Grilled Chicken. It looks super yummy! I am all about Nada Carb noodles lately. They are so soft and the nutrient is on point. What crust do you use for homemade pizza. I am trying to find a healthier option. All the healthy ones I've made taste 'too' healthy. =)

Haha we just usually use a store bought dough because, I agree, the healthier options all taste too healthy for me ;)
