Happy Sunday to you all! I’m excited to share this past week’s meal plan with you all because we had some seriously good food. Like, really good.
And we actually went a little heavier on the pasta this week, but honestly, that’s never really a bad thing is it? Okay, I guess that depends on where your priorities are but for us, pasta = heaven. So here’s a look at what we had.
Sunday: One Pot Pasta with Spinach and Tomatoes + some added Chicken Parmesan Meatballs with freshly grated Parmesan cheese
Another Cooking Light recipe, for the win! This was awesome, and Lucas loved it, too.
Monday: Homemade Mac & Cheese courtesy of my mama + green beans.
Mom’s mac & cheese is always awesome, but she never really uses a recipe. Luckily, I’ve got a few favorites of my own I would totally recommend for ya though…
- Apple ‘n’ Bacon Mac & Cheese
- Buffalo Chicken Mac & Cheese
- Chicken, Bacon, and Ranch Mac & Cheese
- Lighter Mac ‘n Cheese with Chicken & Tomatoes
- Tomato ‘n’ Butternut Squash Mac and Cheese
All of them listed above are absolute favorites of ours!
Oh, and as a side note, this is what happens every. single. time. I get up from my chair for two seconds.

Tuesday: You already saw this one, but Flank steak + roasted red potatoes + zoodles!
Wednesday: Jay was out snowboarding and I really didn’t feel like cooking so I’m pretty sure I had like, 2 bowls of cereal plus some other snacks while Lucas ate. Oh, how I would be in trouble if I were a single lady living on my own. I’d have zero desire to ever cook!
Thursday: Clear out the fridge/leftovers night (we had a TON between the pasta dishes and other stuff)
Friday: Lemon + Herb Tilapia (a Bumble Bee SuperFresh meal – we still love them!) + baked sweet potatoes and oven roasted cauliflower and carrots
The cauliflower and carrots came from my FarmBox Direct box and they were awesome.
Saturday: Out to dinner
So what’s on the menu for you guys this week? I still have a day or two where I need to figure out something to make!
