Weekly Meal Plan {4/15}

Happy Sunday! I’ve got another meal plan for ya!

Of course, you can always feel free to check out the archives of the meal planning posts – I consult them quite frequently myself.

Here’s a look at this past week…

Sunday: Cheesesteak Stuffed Peppers with brown rice on the side

This was a really good recipe, and pretty easy, too! It also made enough for both Jay and I to have them for lunch leftovers the following day. This wasn’t anything the boys were interested in eating though, so they had a separate meal (which I honestly cannot even remember…probably pasta!).

Monday: Chicken Broccoli and Sweet Potato Sheet Pan Dinner

I know this is probably the second or third time you guys have seen this meal, but it’s just so good and easy that it’s become a favorite of ours. The only change we make is doing slivered almonds in place of pecans (just because we don’t usually have them), and I also add the dried cranberries at the end because Jay isn’t a fan. Both the boys will eat this meal, too, so it’s a win-win!

Tuesday: Leftovers

Wednesday: Healthy Chicken Parmesan Burgers with green beans

Since we had chicken burgers last week, we still had some extra buns leftover (maybe someday they’ll make it easy to buy packs of only 4?!?) so I figured it’d be a good idea to incorporate using the rest of the buns up this past week. We love these because you can make them in about 5 minutes, cook them in about 10, and both of the boys will also eat them. Definitely a weeknight staple for us!

Thursday: BLT Balsamic Chicken Avocado & Feta Salads

Okay, if there’s one thing you guys take away from this week’s meal plan, make it be this and promise me you will try this salad. Hoooooly cow, it was good! I credit most of that to the homemade balsamic dressing (which is also used for the marinade), but the crisp bacon comes in a close second. Even Jay said he thought this was his favorite meal of the week!

Since we ate late on this particular night, the boys had separate meals of butter noodles, chicken, and broccoli.

Friday: Takeout Chicken, Bacon, Ranch pizza

For those of you who are local, this pizza was from Inferno Pizzeria, and it is most definitely our favorite Chicken Bacon Ranch pizza in the area right now. SO GOOD!!

Saturday: Birthday party to go to, so probably pizza if I had to guess!

    I feel you on the hamburger buns. Every time I get them I feel like we're committed to at least two burger meals. Not the worst thing in the world but....

    OMG thanks so much for doing the weekly meals! The cheesesteak stuffed peppers looks amazing! And same about the hamburger buns. I made my man a sandwich with the leftover buns for his lunch at work but forgot to add the deli meat. And the cheese. So it was just a mayo and mustard sandwich. #oops
