Happy Monday! I never got the chance to put this together over the weekend, so it’s comin’ your way a day late…I’ll have a little weekend recap headed your way soon!

Here’s a look at this past week…
Sunday:Korean Beef Rice Bowls w/ brown rice
This meal was not only super easy to make, but it was GOOD!! Jay and I had never tried the Gochujang that the recipe calls for, so I grabbed some at the store, and we both agreed it’s definitely a great addition to the recipe. It’s a little sweet with some heat, so I couldn’t use nearly as much as Jay could, but we loved it!
We served this to both boys, but neither were very into much of it that night, except for the cucumbers.
Monday: Pork tenderloin with homemade mashed sweet potatoes
While we’ve bought them here and there for some time now, we’re really loving these prepackaged pork tenderloins for a quick and easy dinner. Both the boys will eat it (they think it’s chicken…), you literally just toss it in a pan and bake it, and the flavors are great. Of course, it is a little heavy on the sodium, so just something to keep in mind.
For the mashed potatoes, we did a repeat of the same recipe that was in our meal plan a couple of weeks ago. SO good!
Tuesday: Leftovers
Wednesday: Sheet Pan Garlic Herb Butter Chicken and Potatoes with green beans
Add this one to the list of new favorite sheet pan dinners! I was hoping I’d be able to get my chicken to brown like the pictures in the original recipe, but ah well. It all still tasted great.
Thursday: Chicken quesadillas with peppers, onions, and cheddar + a beer
We decided to get another “great week bundle” delivery this past week from the local Gorsky’s Farm, and when choosing my meal kit options, I just had to go with the quesadillas (you can read more about my first experience with Gorsky’s Farm in this post). For those of you who are local, definitely check them out!
Friday: Spinach & feta stuffed chicken topped with sauce and mozzarella cheese + roasted potato wedges
This was another meal from our Gorksy’s Farm delivery. The chicken and potatoes both come cook, you just need to re-heat and serve! We opted to add the sauce and cheese to the top of the chicken just for a little extra flavor (and because we had some extra sauce in the fridge to use up).
Saturday: BBQ Chicken Mac & Cheese
Yet again, another part of our Gorsky’s Farm order. WOW, this was insaaaaanely good! I wished I had ordered more than two servings of it! ; )

Daggone that Mac and cheese looks good! And how adorable the kids like the cucumbers out of everything. I told my man to put cucumber slices for his eyes at the pool over the weekend but we only had pineapple. He wasn’t a happy camper. #bagsfordays
