Happy Sunday! I’ve got another meal plan for ya!

Here’s a look at this past week…
Sunday: Easter dinner at my parents’ house
Monday: Chicken Caesar Burgers with green beans and french fries
Soooo good! The boys also each had a mini burger (no bun) with the same sides and they were enjoyed by all.
Tuesday: Crockpot Shredded Beef Enchiladas
This recipe of Kristin’s has been a favorite of ours for a while, even though we hadn’t had it in a while. The boys weren’t into the beef (as I suspected) so they had leftover pasta and meatballs.
Wednesday: Herbed Chicken Cutlets with Sweet Potato Mash and Almond Green Beans
This meal was actually from Hello Fresh, and it was quite good! Our babysitter had given us a code to try a free week of meals a month or so ago, but then I forgot to cancel my upcoming deliveries far enough out, so we got a surprise box!
Luckily, the meals we got were both great, and the boys both really enjoyed the chicken (especially Lucas!).
Thursday: Leftovers (enchiladas)
Friday: Pork and Poblano Tacos with Kiwi Salsa and Lime Crema
This was another meal from Hello Fresh
Saturday: Pizza + wings + salad with the neighborhood crew!
