Weekly Meal Plan {4/17}

I think this nice weather must be getting to my head…I almost forgot to share this week’s meal plan post with you guys!

Honestly, I didn’t do a ton of planning, but we did still manage to have some good meals in there.

Before I get to this past week’s meal plan though, I want to ask you guys…what else would you like to see on the weekly meal plan posts? I’ve had some requests to include breakfast and lunch ideas, along with healthy snacks too (you’re assuming my snacks are healthy…bahaha).

But really, what else would make these posts even more fun for you? Grocery list ideas? I’ve had a few things in the back of my mind, but it always comes down to my good friend/enemy…time. So I want to see what YOU guys want to see, and then we can go from there, cool?

Cool.

Okay, here’s the meal plan!

Sunday: Tilapia with baked sweet potatoes and zoodles

Monday: Brinner! Kodiak Cakes with scrambled eggs and bacon…it was heavenly

Tuesday: Taco Tuesday!!

I need to implement this more often. Tacos are SO easy and if you set up a little make-your-own bar, everyone is happy!

Wednesday: Spiced Pork Chops & Mashed Potatoes with Kale, English Peas & Goat Cheese

This was one of the Blue Apron meals from our delivery and WOW, it was incredible. Seriously…SO good.

Thursday: Cereal for dinner. No judging aloud.

Friday: Big salads with some homemade pizza

I used some of this dough from Wewalka, which the company sent for me to try. They have a few different varieties but I loved how EASY it was (just unroll and cook!) and it tasted great, too.

Saturday: Burgers on the grill with french fries, mac salad, and green beans.

Ohhh, how I LOVE me a warm weather meal with something cooked on the grill. <3

    I usually lurk (I know, that's lame), but I had time today to chime in. I love these meal plan posts and I do use them almost every week to come up with ideas for myself. You eat the type of meals that are normal, healthy, and look really easy to make. I'm impressed. I barely make dinner twice a week and it's just me and my husband (and one crazy job that has me working 24/7). Anyway, I'd like to see some of the behind the scenes of the meal plans. When do you grocery shop? Do you go to the store more than once a week? If not, how do you get perishable items fresh that whole week (I have a problem with this). How do you come up with ideas for meals? Work off a spreadsheet? Thanks again for sharing!

    I seriously look forward to this post every single Sunday. I love it!! I would love to see any thing pertaining to food on here.. Haha!! I love snack ideas, lunch ideas, grocery lists..anything!! I'm kind of In a rut right now and tend to make the same things so I'm always looking for new go to simple easy recipes!

    I would love to see meal prep with grocery shopping.. How do you organize your thoughts, plus definitely some lunches!! I work full time so I really struggle with all meals and usually end up going out for lunch and snacking for dinner when I get home. You get home much earlier- but any ideas on how to easily and quickly make dinner bc I'm limited on time when I get home from work!! Ps Sunday's are my favorite day on your blog! I truly get excited each week to see what you came up with and have used many of the ideas for my own dinners!! So thanks!!

    No changes needed from me! I love how you post what you ATE vs. what you are going to eat. I often wonder if bloggers actually end up making everything they plan. Also, you posted a while ago about needing real maple syrup. Another much cheaper option I do is homemade syrup. It is SOOO good and super easy. You just take 1 cup each of brown sugar, white sugar, and water. Bring to a boil and then simmer for 10 min. Then after you remove it from heat, you add 1 tsp. maple extract. It's heavenly and I use it in all recipes that call for real maple syrup. :)

    With a 15-month old at home I'm always curious what others feed their toddlers for meals - Mostly dinner I guess. Currently we have a rule that we serve our daughter what we eat and if she doesn't like it or want, she will get a pb&j along with her veggies, fruit. The main dish is the problem... she loves veggies and fruit. I'm not sure if I want to continue this or not, but I don't want to give a million choices or for her to be hungry. Some days she will eat what I serve, but not always. I'm always curious what others do as well! It's hard not to feel alone in the world of feeding a toddler even though I know we all struggle!!
