Hello and happy Sunday to you!
I’m going to cut right to it because it’s super late on Saturday night as I sit down to type this and I’d like to go in and sit on the couch and watch the end of the Syracuse game. But it’s been a good weekend so far, and I’ll be sure to chat more with you guys tomorrow.
But for now…it’s meal plan time (<– be sure to check out the new page if you haven’t already!)
Sunday: Easter dinner
Monday: A chopped salad made with some leftover ham from Easter (which I apparently deleted the picture for…oops). It was a night where nothing really sounded appealing, but it wound up doing the trick. I love a good chopped salad!
Tuesday: Chicken Burrito Skillet – super delicious and really easy, too.
Wednesday: Pizza
Thursday: Out to dinner with Sarah – we tried out Smashburger for the first time, and I opted for a classic smashburger with “smashed” sweet potato fries.
It was good, not great. I’d still pick Five Guys over it any day!
Friday: Skillet French Onion Chicken with mashed potatoes, peas, and broccoli
Ohmygodddd you guys. TRY THE CHICKEN. It was incredible and SO easy!!
Saturday: Pasta with homemade sauce, side salads, and garlic bread
So there ya have it! How about you guys? What’s on the menu this week??

I absolutely love chopped salad. I mean really chopped. When I order it out, I am always disappointed if it comes and it isn’t chopped! LOL. This week it is just the basics: salad, chicken, sweet potatoes and roasted veggies.
