Weekly Meal Plan {5/2} and Weekend Highlights

Well hey guys, and happy Monday to you!

Sorry I never got around to posting the meal plan yesterday. My energy was feeling a bit fried and we got to doing a few things around the house so I never got a chance to start writing this up until Sunday afternoon.

It was a pretty fun weekend for us over here, even though not that much of it wound up being documented. We did some stuff around the house (like usual), we went out last minute to meet up with my parents for dinner on Friday, and also visited some great friends on Saturday evening (where Lucas didn’t wind up going to bed until almost 11pm…yikes!).

Jay treated us to some of the most incredible bacon, egg, and cheese sandwiches on bagels on Sunday morning, and it made me seriously wish that we could have them almost every day. It was SO good.

So I figured since I really didn’t have much left to share from the weekend, I’ll go ahead and share last week’s meal plan with you guys today! We had a few yummy ones, that’s for sure.

Sunday: Leftover Cheddar Bacon Ranch Chicken Burgers (since the recipe made 4)

Monday: More leftovers, but I apparently have no photographic evidence of what we ate and also can’t remember so there’s that.

Tuesday: One Pot Italian Chicken and Orzo

This dish was SO GOOD, and honestly, even better the next day for lunch. Not only that, but it’s a one pot meal…and you’ve gotta love those!

Wednesday: Grilled steak (just seasoned simply with some garlic, pepper, and salt), baked sweet potatoes, and shelled edamame (which we had in the freezer but was not very good)

Thursday: Homemade cheeseburgers with melted provolone, sautéed onions, and side salads

Friday: We had no idea what to have (and were starting to get hungry) when Jay got texting my dad and we wound up making (literally) last minute plans to join up with my parents at Applebee’s.

I ended up having a sandwich and some fries, and Lucas was thrilled to see his Nan Nan and Papa.

Saturday: We had plans to head about an hour north near Lake George to visit out friends Kathryn and Paul, who just had a new baby girl six weeks ago! I didn’t get any photos of dinner, but Kathryn put out an awesome spread of Crockpot Pulled BBQ Chicken (my favorite!), pasta salad, roasted veggies, and french fries.

And Lucas even got a little taste of what it’s like to be around a teeny baby…

He was SO into her, it was adorable. He kept going over and would pat her gently, kiss her forehead, and say “Baby!” The only time he wasn’t too sure of her was when mommy was holding her…of course. Winking smile

But seeing him get so excited about the baby made ME even more excited!

Breakfast and Lunch Plans for the Week Ahead

I’ve been craving smoothies lately, so I may wind up doing something like my Strawberry Almond Smoothie. Oh, and this Mocha Protein Smoothie is also pretty good, too!

If I have time tonight (I’m typing this up on Sunday afternoon) I may also whip up a batch of my Apple Cinnamon Raisin Baked Oatmeal.

It’s perfect for reheating throughout the week!

Lunch

I’m planning to make a batch of my favorite EVER chicken salad recipe to have throughout the week.

    One pot meals are great during the week. Stuffed peppers are on the menu for us! I'm also excited to get out and grill now that the weather is showing signs of spring!

    I made shredded chicken in the crockpot and a big batch of quinoa and vegetables for this week's lunches! It felt good because I hadn't meal prepped in forever! I have food!!!!

    I actually just got my first full time job (I start today!) so I'm definitely going to be looking to your blog for lunches and meal prep ideas. I really like the idea of packing salads for lunch, but in my experience chopped lettuce goes bad REALLY quickly in my fridge! Like... it won't be good even two days later. How do you combat this issue and have fresh salads all week long??

      YAY! Congrats to you, Lindsay!! You're not the first person to say this to me so I'm not sure what the difference is? I try not to put anything on ahead of time that would make the lettuce soggy and that just seems to do the trick for me? I also make sure to use airtight containers. Other than that, I'm not really sure?!

    Thanks for the reminder I need to meal plan for the week! Forgot to do that last night. But yesterday we DID do some meal prep and made lunches for the week. Pork, veggies, and mashed potatoes. So easy!

    i basically put avocado in everything and call it good - can't get enough. that baked oatmeal looks amazing and i'm definitely emailing that recipe to myself to make soon!
