Happy Memorial Day weekend to all of you! I hope everyone has some plans to get outside and enjoy some time in the sun (if you’re lucky enough to have some where you are), eat some good food, and spend time with loved ones.
But don’t forget to do that meal planning this weekend, too! To help ya out, here’s a look at our meals from this past week…and as you’ll likely see, we’re totally into using our grill as much as possible right now since the weather has been so great. Ohhh, sweet, sweet (almost) summertime!
Sunday: Italian marinated grilled chicken with baked sweet potatoes and corn on the cob (not quite corn season, but it was still okay!)
Monday: Homemade grilled pizza + side salads
Tuesday: Grilled sirloin steak topped with crumbled feta cheese, oven roasted potatoes, and green beans
Wednesday: Leftover pizza from Monday
Thursday: Out to dinner at Bonefish Grill – grilled salmon topped with mango salsa with whipped potatoes and steamed broccoli
Friday: Cheeseburgers with a veggie/orzo salad and pickles. The orzo salad was SO good…let me know if you guys are interested in a recipe?!
Saturday: Lazy day – aka, takeout subs from a local place that makes homemade chips which were SUPER delicious.
And that’s that! I’m only planning out for maybe 3 meals next week and plan on winging it for the rest because, well, I’m honestly hoping that by the end of next week we’ll have more important things happening. But only time will tell!
