Happy Mother’s Day to all of the fabulous, wonderful moms out there! Whether you’re a fur mama, human mama, or anything in between, you should all be celebrated for all that you do!
We’ve had a great weekend over here so far; yesterday I was able to get out for a little mani/pedi and today we’ve got a full day with what is sure to be some good eats, too. So I’ll be sure to fill you all in on the fun tomorrow!
But for now, it’s Sunday so let’s get down to business…meal planning day.
Don’t be surprised if, over the next few weeks, you see my “meal plans” looking less and less like that. I’ve been aiming to cook 2-3 meals per week, but with my energy and desire to cook dwindling, along with Jay starting up softball, our dinner plans will likely be a little less structured. But hey, that’s how spring and summer roll around here (which you’ll likely see if you look back at some of the archives!).
Sunday: Delivery pizza (Hawaiian – a favorite of ours lately!) x2 + no other veggies because we were lazy
Monday: A delicious lightened up broccoli pesto pasta dish that I’m planning on sharing with you guys soon!
Tuesday: Chicken Parmesan Burgers with french fries and green beans
Wednesday: Another lazy day – a roast beef and provolone sandwich with leftover green beans
Thursday: Enchiladas + homemade guacamole
We had to celebrate Cinco de Mayo, of course! Even if it couldn’t include watermelon margaritas for me this year.
My original plan was to make this recipe, but I got a craving for enchiladas as I was browning up the meat, so I quickly changed course and winged it with some enchiladas. They were pretty simple – just the browned beef with onion and garlic and taco seasoning, a can of red enchilada sauce, and cheese. Lots of cheese.
Friday: Soup and grilled ham and cheese sandwiches…again. No photos, I didn’t have a camera/phone nearby
Saturday: Still TBD as I’m typing this up on Saturday during naptime. But we don’t have much to cook in the house and I really don’t feel like cooking either. So I wouldn’t be surprised if we wind up heading out somewhere later!

Why not bake up a batch of muffins or a quick bread to have for during the week? Pair it with some fruit and a quick scrambled (or hardboiled, for if you’re on the go!) egg, or a yogurt and you’ve got a full meal!

- Pumpkin Black Bean Soup (<—super hearty, filling, and delicious…who cares if it’s pumpkin and it’s May!?)
- Colorful snack plates with rolled deli meat and cheese, crackers, veggies and hummus
