It is seriously boggling my mind that, here we are, almost halfway through June. How is this even possible? Part of me is kinda like woah, okay, slow down summer! But on the other hand, it means we’re just getting that much closer to no longer being homeless. So given the options, I’m choosing to be okay with the latter.
So yeah…it’s meal plan day! We were alright on the meal planning front this week, but thanks to some last minute changes in plans a couple of nights, we ended up having to wing it and make do with what we had. I’m hoping to get a better handle on meals for this coming week, and I’m definitely thinking I need another batch of this chicken salad in my life ASAP, too. I guess we’ll see what happens! But for now, here’s a look at what we had this past week…
Sunday: Chicken “Under a Brick” with Spring Vegetable Quinoa & Rhubarb Compote
Monday: Chicken Fried Rice with wayyyy too much Sriracha
Tuesday: Winged it. Pretty sure I ate some sort of leftovers from the fridge + whatever Lucas didn’t eat from his dinner. Which was likely a bunch.
Wednesday: BLT’s with corn on the cob
Thursday: Pulled BBQ Chicken Sandwiches with Fingerling Potato Salad & Creamy Coleslaw (recipe here)
This was another Blue Apron meal (which we purchased with our own money) and it turned out great. I especially loved the potato salad…such simple ingredients, yet SUPER yummy!
Friday: Spaghetti with homemade sauce (I was surprised/bummed that I didn’t put meatballs in this batch…didn’t realize it until I opened it!) with some leftover grilled chicken chunks added on top for protein.
Saturday: TBD – I’m thinking we may possibly order out some pizzahhhh

i tried blue apron for the first time this weekend – made two meals so far – both AMAZING!! salmon burgers and some beef thing – lots of prep, but ridiculously good!

Great choices! I’ve been loving lots of fresh and local zucchini now that it is finally coming into season! Also, fresh green beans roasted in the oven with local tomatoes are great, too!
Yes!! I’ve gotta get my hands on some more zucchinis…yummmm :)

Could you share your homemade sauce recipe? I hate buying the can stuff with all the sugar and yuck additives but it does taste better than my homemade
