Happy Father’s Day to all the dads out there (who are likely not reading this)! Sending lots of thanks to all of you out there, for all that you do.
We’ll be celebrating with both my parents and Jay’s parents today, so it’s sure to be a busy, fun-filled day. But since it IS Sunday and all, I’m here to share last week’s meal plan with you all!
You’ll notice that many of our meals last week came from Blue Apron. We had one meal leftover from the meals I purchased the week before, and we had two meals this past week from the order that Kanika placed. Their service has proven to be super helpful for all of us cooking together, and I’m sure we’ll likely order again in the weeks ahead. (This post is not sponsored at all by them…we paid for the meals ourselves because we love ‘em!). So here’s a look at what we chowed on last week…
Sunday: Hot dogs with corn on the cob at my parents’ house
Monday: Steak Fajitas with Guacamole & Roasted Zucchini Rounds
This was a leftover Blue Apron meal from our previous week and it was delicious. The zucchini was great, and the steak with peppers, onions, and queso fresco were just awesome. I was reminded that I’m still not a huge fan of corn tortillas (is it just me, or do they taste like cardboard?), but overall it was a great meal. Plus, guacamole with that other awesome salsa we had. YES.
Tuesday: Fiesta Bowls with Mexican Rice (SO GOOD)
Wednesday: An absolutely delicious Cheeseburger Pizza (similar to the one we made last time). It’s just so different, and I’m obsessed with it.
I meant to make some side salads to go with it, but I got lazy and well, they just didn’t happen.
Thursday: Italian Meatball Sandwiches with Caesar-Style Romaine Salad
This was our first Blue Apron meal from this past week (Kanika ordered from her account this week) and it was absolutely incredible. Then again, I mean…look at that cheese. How could it NOT be?
Friday: Chicken Paillards & Fresh Linguine with Summer Squash & Cherry Tomatoes
This was our second meal from Blue Apron this past week and it was good, but it really didn’t impress me the way their meals usually do. I feel like it was lacking something…just not sure what.
Saturday: TBD – Jay and I will probably head out and grab something with Lucas on our way to go spend the night with my parents. I could really go for one of my favorite takeout salads though!

I’m no expert, but my good friend whose mom makes AMAZING homemade corn tortillas told me the secret is in eating them hot out of the pan. Can’t say I’ve tried to make them myself, but I have had some success with the GF (aka “real corn”) tortillas by microwaving for 30 seconds to loosen them up, the pan-sauteeing them for a minute or two on each side!

Whenever we have no idea what to get for dinner, we always go for a drive and let each person get their favorite meal “on-the-go”. Then, we have a little potluck type deal when we get home and each pick at the other’s choices so it’s a big feast haha. Or, when I was younger and ate fast food, we would buy Chinese takeout items we’ve NEVER tried and do the same! I really must try blue apron!
