Happy Meal Planning day to you all! How’s the weekend treating you so far? Good, I hope?!
As usual, I’ve got a weekly meal plan recap for you today. We’re all slowly getting more and more settled over here with our friends, and we’ve got a pretty good system down so far for figuring out how to do our weekly dinners. We’ve taken on somewhat of a “divide and conquer” method, where we’re each in charge of about 2 meals, then we collaborate or “wing it” on the rest of them, depending on everyone’s schedules. So far, it’s going well, and we even tried a new yummy recipe this past Tuesday. Take a look!
Sunday: My favorite Spinach and Black Bean Enchiladas (we had them with some veggies, but I snapped a photo quick)
Monday: Veggie-Filled Sloppy Joe Sandwiches with green beans
Tuesday: Crockpot Meaty Pasta Sauce served over penne
Wednesday: We winged it with some leftovers, and I never ended up taking any pictures…BUT, I recently rediscovered this (super) old recipe of mine for Cheesy Marinara Veggie Stacks and it’s definitely caught my attention. How awesome would they be paired with, say, some fresh grilled chicken? Mmm, mmmm.
Thursday: Chinese Five-Spice Meatballs with Snow Peas and Jasmine Rice
This was a Blue Apron meal and it was friggin’ incredible.
Friday: The most AMAZING filet mignon dinner…I’ll share more details of our meal probably tomorrow!
Saturday: An Amy’s Frozen pizza (the spinach one – SO GOOD) with garlic bread and some side salads
We grabbed this dinner quick at Whole Foods while doing some grocery shopping and got the salad from the cold bar to make for a super convenient meal.
And that’s that! We’ve got a few good meals on tap planned for the week ahead, and a couple days of “winging it,” thanks to some busy schedules. But I have no doubt there will be some good food happening over here!
