It’s Sunday, so you know what that means…
It’s meal plan day! And if you’re ever in need of a little extra inspiration, remember to check out the Meal Planning page!
But for now, as usual, here’s a look at our dinners from the previous week.
Sunday: Tandoori-Spiced Chicken with Green Lentils, Heirloom Eggplant & Cucumber-Mint Yogurt
Monday: BLAT’s with sweet potato fries
Tuesday: Rigatoni Puttanesca with Eggplant
Wednesday: I snacked off of Lucas’s dinner (that basically went untouched) so much that I wasn’t super hungry for my own dinner. Plus, since Jay was out, it gave me less incentive to cook…however, I did have some chicken cutlets marinating in the fridge that needed to be cooked up, so I grilled them on our Griddler Jr. and topped a couple of them with some provolone cheese, dried cranberries, avocado slices, and a drizzle of balsamic vinaigrette. It was totally random, but super delicious, and I bet it would have been great as a sandwich.
Thursday: Seared Pork Chops & Kamut with Corn, Spinach & Stone Fruit-Cherry Tomato Salsa
Friday: Jay and I were out running errands on Friday evening (while Lucas was home with his grammy) and we wound up waiting too long for dinner and were STARVING. We realized we had a $25 gift card to Applebees, so we decided to use that. And, well, let’s just say it wasn’t our finest moment.
Plus soft serve cones for dessert.
I was hurtin’ after that meal, but man, did it taste good going down.
Saturday: Pizza!

Yum. Lots of good eats. Those sweet potato fries look amazing…and the blue apron meals…and the soft serve haha. Honestly for me during the work week, meals aren’t very exciting and I pack my lunches for the week today so I can just grab and go.

I made a really great vegetable torte this week and also some Italian stuffed hamburgers with tomatoes, spinach and fresh mozzarella. Will be posting a blog this week with recipes.

Did y’all get a few blue apron meals this week? Those seared pork chops look amazing. I am looking forward to giving blue apron a try as a easy meal plan once baby comes! Just shared my weekly meal plan on by blog as well.

Kevin worked late last week too. Those nights always throw me off!
I completed a ton of food/ingredient prep this week, so lots to choose from.
Protein: crab cakes, roasted chicken, baked cod with tomatoes & onions, bison chili (football!!), roasted chicken, slow roasted pork tenderloin, chicken chowder
Veg: every green veggie imaginable, roasted sweet potatoes, parsnips and carrots, roasted kabocha and delicata squash, zucchini fritters, zoodles, and shredded savoy cabbage (for Chinese chicken salad)
Fruit: grapes, Apple’s & bananas
Going to be a good week! Plus frittata & banana blueberry paleo muffins for breakfast
