Happy Sunday/Meal Planning day to you all!
I’ll tell you that while the beginning of this week started off great on the meal planning front, the end of the week definitely fell by the wayside and wound up including some last minute meals and takeout or restaurant fare. I had accounted for the dinner out on Thursday and figured we’d just sort of “wing it” on Friday and Saturday…and when that happens, we almost never cook. I guess it’s a good thing I started trying out this whole meal planning thing after all. I can’t believe I’ve been at (for the most part) since January. Who knew?!
Sunday: Grilled chicken, bacon, ranch paninis with sweet potato fries
It had been SO long since we’d had paninis – they were welcomed with open arms (and mouths).
Monday: Pork Chops with Balsamic Roasted Vegetables
We had these a while back, and I definitely remember them being better the first time. I don’t know what it was, but they just seemed like a pain to cook this time around?! Ah well, they were still alright – and the feta cheese on top certainly helped!
Tuesday: One Pot Pasta with Spinach and Tomatoes
We also had this recipe a while back (can you tell I was going through the meal planning archives??), and it was good (and easy!) as I remembered. Yum!
Wednesday: Homemade chili + cornbread
Oh, hello Fall!
Thursday: Out to dinner with Kanika and Shaheen
Friday: A bunch of leftovers (it included a small leftover piece of steak, some spinach pasta, and a couple pieces of cornbread). It was so not thrilling to photograph that I just didn’t bother.
Saturday: TBD – although I have a feeling it may wind up involving cheeseburgers. Heck. YES.

Yum! The chili looks delicious! Meal planning has been very helpful for us too and I like going through cookbooks or Pinterest deciding what to make for the week before I place our grocery order online. I’ll be adding chili to next week’s meal plan now :)
