I hope you’re all thoroughly enjoying your Labor Day weekend – I know we sure are!
But of course, I wanted to pop in quick (since it is Sunday and all) to share our meal plan from this past week. We had a couple of treats, thanks to another Blue Apron delivery, and the rest is a good mix of planned meals and things we “winged it” with.
Sunday: Vegetable Fajita Tostada Bowls
Monday: Brinner!
Tuesday: Chicken Parmesan Meatloaf (we used THIS recipe and it was super easy and pretty good, too!) plus some frozen mixed veggies
Wednesday: Seared Steaks with Romesco Sauce & Roasted Potatoes with some extra frozen zucchini on the side
That was a delicious steak dish and the romesco sauce was incredible!
Thursday: Fresh Lemon Linguine with Summer Vegetable Sauce & Seasoned Ricotta
The lemon linguine was really unique, and the portions for this meal were huge – we loved it!
Friday: Leftovers from my work picnic Friday afternoon. I started with a big bowl of sun-dried tomato infused Caesar salad…
And then Jay and I shared some garbage bread and dips (which I already knew were delicious because they were from B-Rads Bistro).
A little healthy mixed with some treats.
Saturday: Thai Chicken Burgers with Hoisin Mayo & Roasted Potato Wedges
I’ll say that out of all the Blue Apron meals we’ve had, this one was probably the most filling. The burgers were huge and they had the most amazing flavors that we would have never ever added ourselves. I’d highly recommend this one!
So there’s a look at all of our meals last week – lots of deliciousness for sure. I’m still working on figuring out our meal plan for this week coming up, so if anyone has any good recommendations, feel free to share ‘em below.
