Oh man, this week has just been crazy, you guys. Between busy days at work and busy evenings at home, I feel like I’m behind on about 1,001 and different things. You know how it goes!
Monday was my father-in-law’s birthday, so as soon as Jay got out of work, we all headed over to visit with him and celebrate.
The good news is that he’s no longer in the hospital (I think I mentioned this to you guys before but I can’t remember) but he’s currently (and hopefully temporarily in a nursing home). We’re hoping that with the help of some physical therapy and occupational therapy, we’ll be able to get him home soon, but only time will tell.
We all want Papa T home!
As for Monday, we all had a nice time celebrating and we all thoroughly enjoyed the birthday cake!
What else have I been enjoying this week? Hmmmm, well, there’s been waffles with peanut butter, banana, and syrup.
And there’s also been some delicious salads made with lots of veggies and rotisserie chicken.
Oh yeah, and then there was THIS salad made with chicken, avocado, cranberries, apples, carrots, and creamy Italian dressing. That was a winner.
I also made a banana bread with some overripe bananas and not only was it super simple, but it. is. DELICIOUS. I used THIS RECIPE in case you’re interested!
And as you can see, I also wound up baking some cookies. These would be my Chewy Chocolate Chip Heath Bar Cookies, which actually got a little blog re-do/makeover.
That post has been one of my top recipes for as long as I can remember, and it’s always been at the back of my mind to spruce it up a bit. The pictures were taken over 5 years ago and, well, they were looking a little sad (I even left a few of the originals in the post, haha). So if you haven’t already checked these babies out, definitely go see them freshened up a bit over there.

I use the Flour’s banana bread recipe that is slightly tweaked by Averie Cooks…I’ve found it to be the perfect consistency!
Birthdays are always a fun part of the week. I’ve just been really looking forward to thanksgiving next eek and visiting family. Then the following week, starting my new job. Lots to be happy and thankful for!

I love redoing recipe photos. Pretty much all of mine need to be redone, except the ones I’ve posted this year. A good camera and some food photo tips helped wonders! Annnd now I want those cookies :)

I’m sitting in bed nursing my son after we both woke up starving and those photos of the banana bread and cookies are killllling me!

Going on with me: I have a lunch date this afternoon and I am so excited. this will be number two for us and he is lovely. :) fingers crossed for a good one!

That salad with cranberries and avocado sounds delicious. My assignment for our family Thanksgiving is salad, which is the most un-fun thing on a Thanksgiving table!!! :) Maybe I’ll give this one a try :)
