So I continued my quest yesterday to find me an apple fritter. I thought I remembered DD’s usually having them, but when I went to check it out yesterday morning, they were sadly out of them. So apparently I am just going to continue to attempt to fulfill my real craving with other things instead…for example, the blueberry cake donut that I picked up along with my (very sweaty…isn’t that the worst?) cookie dough iced coffee.
Don’t get me wrong…the blueberry cake donut was right my alley. You know how I feel about those things! But I am confident that by the end of this week, I will have an apple fritter in my hands…err, belly (thanks to the locals for the tips…totally checking out Stewarts or Bella Napoli!). I mean, you guys know how it goes…until you actually fulfill that craving, you usually just wind up subbing random things until you finally get it. Right?
Sorry, am I being obnoxious about apple fritters? Okay, I digress. But I’ll still let you know when I snag one.
So seeing as today is Wednesday and all, I’m going to jump on the WIAW bandwagon again (thanks for hosting, Jenn!). I know that I didn’t take pictures of everything I ate, but I’ll fill you in where I can remember.
Like, for example, my actual breakfast was a strawberry/banana/spinach/almond milk/peanut butter/half a serving of Shakeology smoothie that I shared with Lucas on our ride in to work/daycare. Super yummy.
The donut was my mid-morning snack. Mmmm mmmmmm.
Lunch was more of my favorite chicken salad + a King’s Hawaiian dinner roll on the side (obsessed).
And right after I finished the chicken salad, I also ate a vanilla Oikos Greek yogurt…only swap out the granola pictured below in the recycled photo for fresh blueberries.
The blueberries were fantastic.
After picking up Lucas from daycare, on my ride home, I also ate another KIND vanilla blueberry bar.
Again, another recycled photo since I thought about writing up this post after the fact, of course.
Oh, and as a side note…this has nothing to do with what I ate, but I DO need to tell you that this top from Fabletics has become one of my absolute favorites.
It’s the Aruba Wrap Top II, and I already own it in three different colors. And if they made it more colors, I’d get those too. I love the fact that it’s from a company that makes workout/casual clothes, yet it can still be dressed up or down for work. I paired it with my (dirty…ahem) white denim and bracelet that I got in my last Stitch Fix and I thought it worked just great. SO comfy!
Once Lucas and I got back yesterday, he played for a bit with Kaura while I worked on getting dinner started. Ohhh, it was a good one.
I made the same Fiesta Bowls with Mexican Rice that we enjoyed a few months ago, and they turned out to be a hit with everyone – kiddos included! We also all ended up snacking on tortilla chips with this homemade salsa that Kanika got from one of her neighbors.
That stuff was insane, and don’t worry…I’m currently in the process of trying to get my hands on the recipe to share with you guys. SO GOOD.
Shortly after dinner, it was tubby time…
And teeth brushing time which, surprisingly, is actually not a struggle lately. He actually lets us brush, and now that he’s figured out he can make funny sounds while we’re brushing, he thinks it’s just the best thing ever.
Little ham.
And although the night still isn’t over right now, there will most likely be some sort of dessert happening soon. Or kettle corn, which is sitting right next to my bedside (talk about dangerous, right?). But let me tell you…I recently came across an older post of mine and could absolutely be 100% okay with having one or two of THESE…
We shall seeee!
So there’s a little look at my Tuesday. Not too shabby…and definitely better than my Monday.

i get you on the whole, “once it’s in your head” thing! For three weeks I was craving chipotle and no matter what I did I couldn’t satisfy it. Finally we went and now I’m ready to go again!

During the school year someone always delivers these amazing donuts once a week and I always snag an apple fritter – you’re making me miss those! I’m not usually a donut eater but they are so good that I literally have one once a week!!

I’m the same way with my cravings! Sometimes I’ll try to do a healthier version of my craving and it just never works for me. I just need to go with the real brownie or milkshake! Good luck on your apple fritter quest 2015!

Hi! Where I live- Massachusetts, we always ask for a extra styrofoam hot cup to put the iced coffee plastic cup into so it collects all the condensation! No wet cup! Some Dunkin locations charge for the extra cup but most give it free! :) always double cup!

Hahaha I love the rant on the neverending quest for an apple fritter!! I’ve been the same way just for a simple donut the last week and a half! Of course last week I take a day off from work and someone brought in donuts. Today I finally decided to bring donuts to work so I could get in on the action. YAYYYY! It’s so funny how one NEEDS to satiate those cravings!! Good luck on the hunt! :)

oh man i remember when Only 8 first hit the places upstate — Snowman, Angie B’s, that place in Latham near Laney’s — and i was trying not to do dairy so i’d get these cravings and have to drive all over for it. we’re so funny sometimes. tubby time and toothbrush pix are too cute!!

Hi Courtney – The “salsa” that you are loving is something that I make all the time and absolutely love, except we call it “Texas Caviar.” Google that and you will find a recipe. If by some chance you can’t find it, let me know and I will get it for you. It is really good when you use Fritos “Scoops” to scoop it up with. Yum, I just might have to go make some now. Love your fiesta bowl idea. Looks pretty simple and tasty! I’ve kind of been off my Mexican food kick lately for whatever reason, but maybe I’ll have to jump back on it starting with a fiesta bowl. ;)
Aaaand, our toothbrushing struggles have just barely begun. Hunter was always pretty chill and easy with it for the longest time … until like, a week ago. I need to Google tricks or something? I don’t even know what to do. Ha!

As a fellow apple fritter lover, I feel it is my duty to tell you that DD’s apple fritters are not “real” apple fritters. Don’t get me wrong…they’re def yummy, but they have more of a glazed donut with apple pie filling thing going on. If you have recommendations for places near you with good apple fritters, then I’d go with one of those and stick with DD for your beloved blueberry cake donut :)

Gah those brownies look INSANE. (which I can’t say lately without thinking about the german group in Pitch Perfect singing insane in the membrane). The salsa you had looks a lot like a bean salad I make and LOVE (just minus the red onions and with a little less dressing!). If you ask for an extra hot cup with your ice coffee it won’t sweat and will insulate the ice coffee so it doesn’t melt. I’ve been doing it for years it’s a great tip for the summer!!

Just made those zucchini brownies —- Yummy! They are fudgey and satisfying. My picky hubby even liked them :). I made a half batch (in an 8×8 pan) with no issues.Thank you for sharing the recipe.
