How ’bout some pretty flowers to brighten up your Monday?
As someone who loves and appreciates neutral, classic color palettes for everything from my wardrobe to home decor, there’s just nothing like a bright and vibrant bouquet of beautiful flowers!
So how was everyone’s weekend? I finally got one thing off my to-do list (which has been on my list for at least two months now…!) and made a double batch of these Peanut Butter Cup Energy Bites.
I’ve had a bag of pitted dates sitting in the pantry for what feels like forever, and had been looking for an energy bite recipe to use some up. So a double batch it was, and I’ve got half of them stored in the freezer for now. They’re awesome, I definitely recommend!
We had our usual Saturday morning soccer, and Lucas finished up his winter recess with not one but two fun trips! First, to Dave & Buster’s for a special date with mom… <3
And then again at a play place for a birthday party for one of his buddies from school.
Going to bed last night, he kept telling me just how FUN his week was…which is certainly true. This kid had trips to the museum, the movies, out for lunches, time with his grandmas, visiting the Legos at the mall…
He had it made! Thank goodness for grandparents who can help keep life moving while the kiddos have breaks from school or daycare and mom and dad still have to work. We are so incredibly lucky to have them!
On Saturday afternoon, I wound up getting a text from my good friend, Kanika, asking if I was around and wanted to meet up that evening, so we got together for dinner and drinks at a new-to-me restaurant in Albany called Dove + Deer.
It was a super cute spot, cozy atmosphere, and the food was incredible. I wished I had taken more photos! We shared an amazing house cheese spread, and I ordered their Bleecker salad with chicken which was outstanding.
Then, of course, when you see that there’s a chocolate chip skillet cookie on their dessert menu, you never pass up the chocolate chip skillet cookie.
Everything was just outstanding! So for the locals, I definitely recommend checking it out.
This outing also comes off the heels of another little girls dinner I got to have a couple of days prior, with my pals Sarah and Mal. We met up at Ama Cocina, another new-to-me restaurant in downtown Albany. Margaritas for all!
We shared some dips/spreads for an appetizer, and both their queso and guacamole were fantastic, as were their homemade tortilla chips!
I ordered their carnitas tacos for my dinner, which were good, but a little greasy.
But of course, any time you’re out with friends, its more about the company than it is about the food, right? ; )
I’ll be back later this week with a new dessert recipe I tried, which I was totally SHOCKED by!

YES the chocolate chip cookie skillet should never be passed up!
And now I want a margarita.
