Chocolate Chip & Peanut Butter Explosion Cookies

Chocolate + peanut butter lovers, unite! These chocolate chip cookies are exploding with peanut butter cups and Reese's Pieces to make for the perfect (but not overly peanut buttery) cookie. They're soft, moist, and you won't be able to keep your hands off of them.

Ingredients
  

  • 1 stick salted butter melted but not hot
  • 1/2 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1-1/2 teaspoons vanilla
  • 1 egg
  • 1-1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • heaping 1/4 teaspoon salt
  • 1/4 cup chocolate chips
  • 1/4 cup Reese’s Pieces or Peanut Butter m&m’s
  • 1/4 cup mini peanut butter cups halved, or chopped peanut butter cups

Instructions
 

  • Preheat oven to 350 degrees.
  • Using a stand mixer or electric beaters, beat butter with both sugars until creamy.
  • Add vanilla and egg; beat on low speed until just incorporated - 10-15 seconds or so (if you beat the egg for too long, the cookies will get stiff).
  • Add flour, baking soda, and salt. Use a spatula or your hands to press the dough together until it is just combined (it should form one large ball that is easy to handle).
  • Add the chocolate chips and peanut butter candies and incorporate with your hands or a spatula.
  • Roll the dough into 12-16 balls and place on a cookie sheet lined with parchment paper.
  • Bake for 9-11 minutes if making 12 (*if making 16, check around 7-8 minutes) until cookies look puffy and dry and just barely golden. **DO NOT OVERBAKE. Take them out even if they look like they're not done yet!
