Easy Lemon Bars

- 1 cup butter softened
- 1/2 cup white sugar
- 2 cups all-purpose flour
- 6 eggs
- 2-1/4 cups white sugar
- 1/4 + 1/8 cup all-purpose flour
- 1/4 tsp salt
- 4 lemons juiced
- zest from 2 lemons
- confectioner's sugar for dusting
Preheat oven to 350 degrees F.
In a medium bowl, blend together softened butter, 1/2 cup sugar, and 2 cups flour. Press into the bottom of an ungreased 9x13" pan.
Bake for 15-20 minutes or until firm and golden.
In another bowl, whisk together the remaining 2-1/4 cups sugar, 1/4 + 1/8 cup flour and salt. Whisk in the eggs and lemon juice. Pour over baked crust.
Bake for an additional 20 minutes. The bars will firm up as the cool. Dust with confectioner's sugar (I put a couple of tablespoons in a metal strainer and sifted it over the top). Cut into triangles and enjoy!
