Cupcakes
- 1 box Spice cake mix
- 1-1/3 cups apple cider
- 1/3 cup applesauce
- 2 egg whites
- 2 eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Apple Cider Cream Cheese Frosting
- 1/2 cup butter softened
- 8 oz. reduced fat cream cheese softened
- 2 tablespoons apple cider
- 1 teaspoon cinnamon
- 3-4 cups confectioners’ sugar
For the Cupcakes
Preheat oven to 350 degrees. Line a cupcake pan with 24 cupcake liners or spray with nonstick cooking spray.
Blend spice cake mix, apple cider, applesauce, egg whites, eggs, cinnamon, and nutmeg until moistened. Beat on medium speed for 2 minutes. Pour batter into prepared muffin cups, about 3/4 full.
Bake for 14-17 minutes or until wooden toothpick inserted into center comes out clean. Remove from pans, place on wire racks, and cool completely.
