Hey guys! Sorry for the lack of post this morning…it was a little unusual of a morning, so my routine was all outta whack. By the time I went to post breakfast, it was time for lunch! So let me get you guys all caught up to speed, since I’ve had two QUITE tasty meals so far today! ;)
I woke up pretty hungry, so before anything, I snacked on this 1/2 of a banana.
I had to be out early this morning, with one of my stops being Panera Bread. I have had many of their bagels for breakfast and LOVED them, but I wanted to try and cover more of my nutritional bases than just carbs. I’ve been driving by a billboard for a couple weeks now, advertising for their “Breakfast Power Sandwich”. Every time I drive by, my mouth begins to salivate and I start daydreaming about how delicious it must taste…then I hear the sounds of car horns honking at me, and I pull the car back into my own lane and remind myself to focus on the road…. ;)
So, needless to say, today’s breakfast was long overdue, and probably beneficial for my own safety while driving!
The Breakfast Power Sandwich has eggs, aged Vermont white cheddar cheese, and smoked lean ham, on a slice of their whole grain bread. When I first got it, I was actually a little surprised by its size, thinking it looked pretty tiny. However, by the time I was finished, I felt completely satisfied and it ended up keeping me full for about 4 hours! Not to mention it was just as delicious as I had hoped! ;)
I also ordered myself a hazelnut coffee with skim milk…and still NO splenda!! I think I can get used to this, guys! :)
By the time lunch rolled around, I was craving VEGGIES & leftovers, so I made it happen!
I started with a fabulous salad of romaine, cukes, carrots, yellow peppers, grape tomatoes, 3 bite-size mozzarella balls, and some cut up leftover sweet potato fries.
The cold sweet ‘taters totally made the salad…they rocked my socks! :-D
On the side, I had the rest of my leftover tuna salad from last night, which I scooped up with some Coconut Curry Livin’ Spoonful crackers.
The Coconut Curry crackers were actually a little too spicy for me the last time I ate them plain, but paired up with the tuna, they were PERFECT! :)
I’m totally craving something sweet right now, so I think I just might have to do a little baking! ;)

I just love Panera. But I’ve never had any of their breakfast sandwiches yet…

I absolutely love Panera. I used to live in an apartment that was literally right above one. I was in broccoli-cheddar-in-a-bread-bowl heaven. Now you have me craving a bagel.

Where did you get those Livin Spoonfuls crackers? Were those from the Troy Farmers market or from the store? The different kinds you have been talking about sounds delish!

No, I actually bought them online…not sure if you can buy them anywhere around here?
