Well heyyyyyyy there, friends! Happy Monday to you all. Did everyone have a great weekend? Mine was the perfect mix of busy, friends, and relaxation. I didn’t spend too much time on the blog, but here’s what you may have missed…
After such a busy day on Saturday, Jay and I were both pretty wiped out yesterday. I also, for some reason, was feeling a bit under the weather so yesterday wound up being a pretty lazy day. Lazy as in, never even changed out of my PJ’s and parked myself on the couch all day long. No joke. I really think it was needed though, and I am feeling a bit better today.
To go along with our lazy theme last night, we decided to just throw together a bunch of our leftovers from the party for dinner. Here was my plate:
Veggies + hummus, sweet and sour meatballs, a chunk of baguette, and a few pieces (only wound up eating 2 of them) of party rye toasts that actually never even got made at the party. I had already mixed up the topping before the party started, so we still have all of it left in the fridge. Whoops.
For dessert, I had a couple leftover Santa hat brownies. Yum.

Breakfast
Today’s morning meal included a yummy little treat that I’ve been enjoying for the past couple of days.
First, I scrambled up an egg, added some chopped up spinach, and topped it with salsa.
Not just any salsa though…this mango peach salsa that I picked up over the weekend.
It. is. so. freakin’. good.
To go along with my eggs, I had half of a bran muffin topped with a little butter.
While I was out doing some last minute grocery shopping on Saturday, I ended up passing the “Oops, we made too much!” rack, and came across a 4-pack of bakery bran muffins for a dollar. I was also a little hungry while shopping, which may have influenced my purchase slightly.
I’ve been enjoying half of a bran muffin at a time, like for yesterday’s breakfast…
And for a snacky lunch both yesterday and on Saturday, paired with a yogurt…
They’re a little crumbly, as if you couldn’t tell, but they still taste great. I’ve long been a fan of Price Chopper’s bran muffins, but it’s been ages since I last had them. So good!

Bran muffins are delicious, especially when cinnamon, raisins, and butter are involved :D I’d have to say that my favorite thing to get at a bakery is probably a cinnamon bun. Although, to be honest, I probably wouldn’t turn down any freshly baked goodies.

We had an incredibly lazy Sunday as well… I wasn’t feeling awesome and it was snowing all day, so it made for the perfect lazy day. My favorite bakery item would probably have to be a muffin with streusal topping! That’s a tough question considering I love pretty much any baked good though. ;)

I’m a big fan of fresh doughnuts at bakeries. I love small, mom n’ pop bakeries, but we don’t really have any around here. I think they’re falling by the wayside.

Yesterday was super lazy for me tooooo. My favorite thing from bakeries is probably the pastry section or straight-up bread. Both are just extra tasty.

Love brain muffins! My favorite thing from a bakery would be a raspberry crumble. They’re sometimes called German pizzas, too. They’re so darn good!

I didn’t know Sabra made salsa! Their hummus is delicious, so I bet the salsa is too! Gotta remember to pick some of that up. Sweet and spicy is my favorite combo.

It’s been so unbelievably long since I’ve had one, and come to think of it I don’t think I’ve ever seen one in a bakery here. But in Australia they were my fave!
On the savoury side of things, I would demolish a sausage roll or meat pie.
