My New Favorite Enchiladas

Have I mentioned just how much I love Mexican food these days?


Oh, I have? Silly me. ;)

Last night we had our friends Joe & Kate over for dinner (not bbq pulled chicken for a change…although Mexican does seem to be our other favorite) which turned out to be a super fun night, as always! I will admit that it was a bit of a whirlwind to get everything together yesterday…I got stuck a little late at work and hadn’t pre-prepped anything. Thank goodness Jay knows his way around a kitchen and was able to at least get the enchilada sauce started.

So as soon as I got home, I threw my coat off and got to work. Boy, I’ll tell ya…I work GOOD under pressure! I had the whole meal pre-cooked, prepped, and ready to go into the oven in about 45 minutes. Then I stopped, took a breather, and finally went to the bathroom.

So the main course for the evening was enchiladas, and when I tell you just how excited I am to have them again for my leftovers for lunch today, I’m not even kidding. I used the same recipe that my friend Kanika used on Saturday, which is this Black Bean Spinach Enchiladas recipe.


The recipe makes 8 enchiladas, but knowing that I’d have some carnivores amongst us, I also cooked up some ground beef with onions and chili powder and made 4 more with refried beans, the beef mixture, and cheese. Luckily, there was enough of the homemade enchilada sauce from the other recipe to use for both, so we were good to go.

Once the enchiladas were into the oven, I quickly cooked up a batch of my favorite cilantro lime rice from Skinnytaste.


While everything finished cooking, the four of us snacked on some chips, salsa, and some Trader Joe’s Guacamole Hummus. Okay, I’d never had the stuff but WOW, was it good. I also never got a chance to snap a picture of it, but I found one here, so here’s what to look for in case you trust my judgment enough and want to go out and buy some.

I can promise you…I will be picking this up at my next TJ’s trip!

My plate for dinner – rice, a black bean spinach enchilada, and half of a beef enchilada. The beef ones weren’t my favorite, so I left that and wound up having another half of the black bean spinach ones because I just love them.


I’m even tempted to say they’re my new favorite (even over my creamy chicken enchiladas recipe). SOOOOO good.

After dinner, we wound up watching the movie Argo and snacking on delicious brownies that Kate made (and I also never wound up snapping a photo of). Have you guys seen this movie?

It interested me a little bit when it was out in theaters but we just never got around to watching it. I must say though, it was a great movie! It had all four of us in such suspense the entire time, yet had a little comic relief in there too. I really, really enjoyed it…and you know that’s the truth because I was able to stay up until almost 10:00pm watching it and never fell asleep. ;)


This morning, I really wanted waffles but, of course, I knew I wasn’t going to give myself enough time to have them…

So I’m most likely going to be having a breakfast that looks something similar to this one, since I know I have a cup of hot oats stashed away in my desk drawer.

Hey, it’ll work. One of these days I’ll give myself enough time for waffles again.


On a different note, I’m so glad to see so many of you psyched about the Reebok giveaway! Keep the entries coming…you still have until tomorrow to enter.

Tonight right after work, Jay and I are heading out to meet up with his parents for dinner AND we’re picking up our crib!! Ahhh, I’m so excited! Hopefully this weekend we’ll be able to get it put together…as long as we can finish clearing out the rest of the stuff in that mess of a room. ;)

Mexican food is so good! I’ve been having tacos every weekend at my new favorite takeout spot! If I had unlimited time I would make scrambled eggs. I think when they are reheated in the microwave, they just taste soggy.

Those enchiladas look delicious! So cheesy – the way they’re supposed to be! There’s a recipe on Skinnytaste for zuchinni enchiladas that’s worth checking out too.

And Argo! What a movie! Even though I knew the ending, I was still on the edge of my seat the whole time. My husband was so annoyed because I was that obnoxious! HAHA!

Those enchiladas look awesome! I would be all over the bean ones, and my hubby would love the ground beef ones. I made an awesome batch of cilantro lime quinoa on Monday…tastes just like chipotle. So so good!

If I had time for any breakfast, I would probably pick pancakes or waffles and an egg white omelet!

Yum those enchiladas look fantastic! I’ve actually never ever had one before, I’m not sure why I guess as a kid I just didn’t like all the sauce and stuff. I was a weird kid to say the least.
If I had unlimited time in the morning, I’d definitely bake up something or have pancakes each morning. Or even do the same old, I like what I eat now for the most part, unless I’m in a major rush then my meals don’t look too pretty.

We love breakfast in our house so we always make sure we wake up early enough to have one. :) Lately, my favorite has been waffles.

Mexican food is love <3 I have a serious obsession with salsa right now and end up putting it on things that aren't traditionally Mexican :mrgreen:

As for breakfast, I usually wake up early enough not to find myself in a rush, but I've been sticking to cereal and yogurt bowls. Don't know why, but it's all I've been craving.

Have so much fun getting your crib! You should try making enchilada pasta for dinner one night since you’ve been loving Mexican. I make it often and it’s so easy! Just add all of your favorite enchilada ingredients into pasta and enjoy :-)

Oh man I love breakfast so much, it’s hard to choose just one thing! But I would probably pick chocolate chip pancakes or French toast since I don’t ever have time for those!

If over night oats weren’t so many calories, I would make myself THE BIGGEST batch of overnight oats every morning!!! And try different flavors! And put lots of yummy granola on it!

If I would have unlimited time for breakfast or someone to prepare it FOR me… It would be banana/chocolate chip pancakes with peanut butter mousse for topping… Nothing fancy or anything lol

How do you make your enchilada sauce? I rarely make enchiladas at home because I haven’t found a canned sauce I like, and it never dawned on me to just make my own! I guess I liked the excuse to go out for Mexican ;)

I think even if I had unlimited time I would still make porridge (oatmeal). It’s my all time favorite breakfast. Hot, filling and delicious!

If I could have any breakfast it would be homemade waffles and eggs with home-fries. I like to go all out for breakfast! :)

Mmm those enchiladas sound and look amazing! The brownies also sound delicious! If I had unlimited time in the morning, I just would enjoy my breakfast more instead of scarfing it down! I’d also probably venture into French toast or pancakes more often!

We just watched Argo a few days ago as well! I really loved it!! And to think it was based on a true story was amazing! We also just watched Zero Dark Thirty last night, if you haven’t seen that one yet I recommend it as well!

I usually do have pretty close to an unlimited amount of time in the morning (most days I have afternoon classes) but I still usually go with oats or eggs. I’m lazy first thing!

Those look so delicious!! I’m sure your homemade sauce is amazing… I’m not that talented so I stick with the TJ’s enchilada sauce which is actually really good too.

I made these same enchiladas for supper last night after I stumbled on the recipe on Pinterest. My husband and I said the same thing,best enchilada recipe I have used for sure! I can’t wait to eat the leftovers today.

I usually make something hand held that I can eat in the car on the way to work, but yesterday I had the day off so i took a piece of toast and topped it with a smashed avocado, a slice of cheese, black beans reheated from dinner, 2 fried eggs (of course scrambled would be yummy), and hot sauce. So delicious!! It didnt really take that long…just frying the eggs…but it’s not something I can take in the car with me :(

I just made those black bean enchiladas a few weeks ago! They are my absolute favorite ever! So good in fact, I made them again the very next week.

I am going to try the Chipotle Cilantro-Lime rice recipe. Chipotle’s rice is the best!
