What’s better than a Sunday afternoon with family and good food?
Not a whole heck of a lot! :-D
This, my friends, is my family. We may be small, but we sure do know how to have a good time. Come Christmas, Easter, Thanksgiving, & Birthdays, this is our crew, and we’re a darn good time! Mom, Grandma, Uncle Bobby, Hubby, Dan, Meg, (my other Grandma, who’s hiding behind…) & Dad.
And you know what else we know how to do? Have one killer barbecue, even if we have to bring it indoors due to the rain. ;)
While the rest of the fam was noshing on rib eye steak (which I tried a small bite of, and it was actually pretty tasty), I enjoyed a delicious piece of tilapia that Mom was nice enough to cook up for me . She simply coated it with a little spray butter, S&P, and a bread crumb/parmesan cheese mixture that was to die for. This was one of the best pieces of fish I’ve had in a while!

And my contribution: Sweet Tater fries! I sliced up 3 big sweet potatoes, and coated them with a little EVOO, S&P, garlic powder, and paprika. I think the fam may have a new favorite – they went over QUITE well! ;)
And of course, what meal would be complete without a little dessert. I think my jaw almost dropped to the floor when I saw this thing:
Chocolate Peanut Butter Silk Pie. Oh good lord.
I tried to go easy with the size of my piece, considering my big pancake breakfast. Not to mention, the ungodly amount of sweets that I feel like I’ve been consuming lately. Ooooof. :oops:
To be quite honest, as much as I love to indulge my sweet tooth, I’m definitely starting to feel the effects of the added treats these days. My body has been feeling a little sluggish, and we’ll just say I’ve noticed some areas going a little “soft” on me. Luckily, I’ve remained pretty active all summer, so I’m not going to dwell on it; especially since I’m sure I’ll be enjoying tons of delicious food out in Vegas.
So for now, I’m going to go to Vegas. I’m going to enjoy my time. I’m going to eat what I want, and I’m not going to deprive myself. Hey, it’s vacation! BUT, that doesn’t mean I’m giving myself a free pass to go crazy. I’m going to keep moderation in mind, and I’m going to be selective on what I want to indulge in. Then once I get back, it’ll be time to jump back on the bandwagon! ;)

I indulge with food on vacation – but I do make sure to workout while away, so that the great food doesn’t catch up with me!

I know this is really weird. But I am super healthy on my vacations. I am always moving ( walking around and exploring) and with all the options for food, I can always order something healthy!

I hope you have SO much fun in Vegas. Live in the moment there and don’t think about home until you’re on the plane ride back, girl!! <3

Nope, right in the oven. 375-400 degrees for about 30-40 minutes. Very easy! :)

That pie looks so ridiculously good! I would be scared to go near it because knowing me, I’ll probably end up finishing it all in one sitting.
The only thing I do on vacations is just be mindful of the healthy options on the menu and move around alot through exploring and other physical activities. But it’s okay to let go a bit sometimes when you are trying to relax and have fun. Have a great time in Vegas!
