Today is going to be quite a day, my friends. Quite a day. But first, before we get into that, let’s talk about last night’s awesome dinner.
I ended up having clients until about 7:30 last night, so Jay took care of all dinner prep and had it just about ready by the time I got home.
Man, I’ll tell ya. Homemade pizza last week…full chicken dinner this week? Have I mentioned how much I love this man lately?
On the menu: Italian-marinated grilled chicken, garlicky green beans with tomatoes, and skillet-fried red potatoes.
Everything was top notch and thoroughly enjoyed (minus half of my chicken, which I’m saving for later today hopefully) after a long afternoon/evening of work.
Speaking of work, things are starting to pick up quite a bit more which is awesome. I’ve been training some awesome and amazing women who are all so hard-working…making my job just that much easier!
One particular client of mine sent me a few texts after our session last night, thanking me for everything that we’ve been doing for the past two months. Since we’ve started working together, she’s lost almost 30 pounds, which makes me just so incredibly proud and happy for her.
I knew right from the beginning of starting this new career as a personal trainer that one of the aspects I would enjoy most would be seeing my future clients grow and succeed.
I guess you could say that I’m still a teacher at heart…just of a different variety.

So I mentioned that today is going to be quite a day. Things got started bright and early at 5:30am with my own workout, and will be going strong until about 8:00pm tonight when I finish up my shift at work. And on top of my morning and evening shifts today, I also have quite an interesting/exciting/nerve-racking event taking place…I’ll be sure to fill ya’ll in as soon as I can!
But in the meantime, be on the lookout for another fun giveaway this afternoon.
And before I go for this morning, I just had to share this fun little thing that Jay and I found last night…
For anyone who was born in the 80’s…is that not true or what?!? I love it.
Question for the Morning:
My fellow friends born in the 80’s! What else would you add to that list of fun we had?
Michelle@PeachyPalate says
Love the little 80s snippet! Well done on helping that woman loose 30lbs, such a rewarding job!
Caitlin @ This Bride's Joyride says
Haha, I swear us 80’s children had the most fun! I vividly remember playing manhunt throughout our neighborhood streets and when my family first got a nintendo — and whenever it would freeze we would take the game out and blow into the nintendo box like that would fix it!
You are still a teacher in so many ways! Pretty neat that you get to teach people skills that will make them healthier and happier people :)
Claire @ Live and Love to Eat says
Very cute – we’re lucky to be 80’s kids! :)
Andrea @ Andrea Out Loud! says
That is so true!! ahh back in the good old days! :) haha
That chicken looks so picture perfect!
Caroline @ After Dinner Dance says
I love the 80s thing!
Sarah Griffis says
Hahahaha! Amazing! To that I would add: scrunchies! Boy bands! Tamagachi (spelling?)! And perms…
Elizabeth @ Chocolate Drops and Pearls says
Oh I love that it’s so cute! We had the best TV shows too!
Hope @ With A Side Of Hope says
I love the 80’s! I really think we had it the best! So many great tv shows! :)
Khushboo says
Jay sure got it right: a way to her a woMAN’S heart really is through her stomach :)
Ashley @ My Food 'N' Fitness Diaries says
oh man, that 80’s thing is SO true!! it makes me nervous what it’ll be like when my husband and i have kids of our own… at this rate, kids will be having cell phones at 5 years old! sheesh. haha.
Gina @ Running to the Kitchen says
very true. It’s funny that that’s the kind of stuff we’ll tell our grandkids one day and that they’ll look at us in the same way we look at ours now when they tell us, there was no tv, they didn’t have a car, they walked to school…
so weird.
Becca says
That’s great that you are able to be part of someones success story :) I’m sure it feels great to be able to help others everyday, very rewarding!
The 80’s sign made me laugh! I always talk about playing in the street when I was younger.. So much fun.
Liz @ Tip Top Shape says
It has to be great to see these women become stronger and healthier and know that you were a large part of it :D
Julie says
That is SO awesome!!!!!! I bet you feel almost just as good as her having helped her lose 30 lbs and gain a new healthy lifestyle! I’m so happy for you that you are finding your new career choice so rewarding.
Candice says
Totally true!
Good luck with your “nerve racking” client!
Youll do great!
have a great day!~
Kristen @ notsodomesticated says
Side ponytails, leg warmers, and scrunchies!! I mean, come on, we were the DEFINITION of style! ;)
Nicole says
Love the 80s list! Also this is random – but I love your knives! I’m looking for a new set, and the look of yours seem to be exactly what I’m looking for – do you mind sharing the details on them? :)
Lauren B. says
Scrunchies and slap bracelets!
Linda says
OK -I am either getting that green bean recipe or there needs to be a Jay Cooks For You Night give away!
About your client…. I can attest (as you see my FB status today) the AMAZING gift people like you are. Not just a trainer, but invested in someone’s success and all over success not just weight.
I just met you and have benefited greatly. Love the blog, love the energy, love your humor!!
Thank you Gold’s for adding you to my journey!
Courtney says
Thank you SO MUCH, Linda :)
Mailoha says
Courtney can you ask your man for this recipe (chicken, beans, all of it!)?? :)
Courtney says
We just marinate the chicken in Italian dressing – easy peasy! As for the green beans, I’ll have to see if I can get a solid recipe from him. I know he uses onion, garlic, and a little olive oil – that’s pretty much it though. This time, I tossed in a few grape tomatoes. :)
Mailoha says
Awesome. Gracias! :)
Steph @ StephSnacks says
I personally LOVED watching Nickelodeon with all the awesome shows. And Boy Meets World and Wonder Years! My faves!
Valerie says
Dude, love the 80s list! I was born towards the end of the 80s but how about my little pony!?
Brittany says
Love that little piece about being born in the 80’s. So true!!
Best of luck today with your event. :)
Erin says
POGS! What was even fun about those??? I can’t even remember!!
Lisa says
Wow that is amazing you helped someone lose 30 pounds! That must feel so great that you helped her in that process. I love all those little snippets, so true! Well I’m born in 1990, but I still can relate to all of them!
Jennifer @ Peanut Butter and Peppers says
I love the 80’s part! Funny, I remember all of that. Funny how far we have come!
Janae Wise says
Hair crimpers, anyone? I loved to crimp my hair. And what about the colors? The brighter the better.
You sound like an awesome PT. 30 pounds is remarkable, she and you should both be proud. I’ve never done much with personal training myself–I get too emotionally invested in people. It’s great when they succeed, but not so much when they just can’t overcome bad habits & addictions. It’s too hard for me to see that, so I stick with group fitness instruction :)
Linda says
My oldest is 27 and claims the memory of hair crimpers will put her in therapy. HAHAHAHA
Katie @ Plates and Paste says
That is sooo perfect! Ha, I was just saying yesterday how I used to record radio songs onto a cassette!
What needs to be added is that we were the last generation to truly know what MTV, Nickeloden, Disney, etc. were meant to be. I remember so many good shows that I wish I could go back and watch…Adventured of Pete and Pete, Clarissa Explains It All, Alex Mack, Rugrats, Salute Your Shorts, Are You Afraid of the Dark…I could go on and on…
Alan says
I like looking at the things you can cook up, they look healthy and delicious. A rare combination. Congratulations on your career path, am sure you will make a motivational and life changing teacher and coach to all those lucky enough to have you.
Shannon says
That chicken dinner looks mighty delicious! I really want to eat grilled chicken right now. Like, right now. :) And those potatoes? Oh, man- those look deliiiiiiiiiiiiiiiicious!
Meg @ My Chocolate Covered Life says
Snap Bracelets!! Spandex!
Emily says
We had the mother of all Friday nights with TGIF!
Tina @ Best Body Fitness says
LOVE that 80s thing. Ah, nostalgia! And why must you be such a stinking tease!
Holly says
Ok Court, I’ll still waiting for that garlic green bean recipe ;) Everytime I see it, I drool a little. (ew!) haha!
And Congrats to you on such an accomplishment with your clients- that is seriously so awesome! I might be hitting you up for some workouts soon…starting to feel like my old self. Yay! (or you could just move to FL, and I promise I would have a TON of clients for you :D )
Caitlin C says
I missed the 80’s by one year! (I’m a 1990 girl). I can’t wait to hear about your big event, and that’s awesome about your clients! Hearing that would definitely make the job worth it :)
diana loreens says
Your dinner last night sounded absolutely amazing! Homemade pizza one week and a full chicken dinner the next? Jay is definitely a keeper! Italian-marinated grilled chicken, garlicky green beans, and skillet-fried red potatoes sound like a perfect combination. It’s wonderful to have such a thoughtful partner.
It’s truly inspiring to hear about the progress of your clients and the impact you’re making as a personal trainer. Helping someone lose almost 30 pounds and witnessing their transformation must be incredibly rewarding. It’s evident that your teaching background continues to shine through in your new career—guiding, motivating, and seeing your clients succeed.
