Good evening, friends! How’s Tuesday treatin’ ya’ll today?
Despite a few hiccups at work today, my day has been pretty kosher. Nothing out of the norm, and nothing overly exciting. Hey, we can’t have outrageous excitement everyday, right?
I will say, however, that I am getting a kick out of reading all of your excuses for not wanting to workout out from this afternoon’s post. One reoccurring excuse I’ve seen that I can absolutely, 100% relate to?
Not wanting to wash my hair/shower twice in one day. Yeah…why else would I drag my rear outta bed at 5:30am??

Lunch
I already shared my mid-morning snack with you guys this morning, so let me fill ya in on the rest of today’s goodies. Lunch included a majorly delicious salad.
Complete with:
- romaine lettuce
- cucumbers
- grape tomatoes
- baby carrots
- onions
- spaghetti squash
- corn
- leftover diced ham
- 2 slices deli turkey
- balsamic vinaigrette dressing
For a mid-afternoon snack, I noshed on a couple Wasa crackers and a wedge of The Laughing Cow Light Swiss Cheese. Remember when I was on a Wasa kick this past summer? Man, I don’t know why I stopped!
All of today’s work food. Quite a colorful, tasty spread if I do say so myself. ![]()
Dinner
The other day at the store, I picked up a bag of mini sweet potatoes for $2.00. The things really are mini compared to what you usually find in bulk, but they’re the perfect size to pair with a dinner of protein and veggies.
I paired my mini baked sweet potato with half a piece of sautéed chicken chunks and a box of frozen asparagus. This was my first time attempting frozen asparagus and I’m happy to say I’m a fan.
A big fan, indeed!
I’m thinking dessert tonight may have to be some hot chocolate…yeah, definitely some form of chocolate.

I hear frozen asparagus is one of the few frozen veggies that is just as good as fresh. THe canned asparagus freaks me out but I could definitely give frozen a try. Can’t wait to hear the news!

Your dinner is the epitome of nutritious! I agree about the washing your hair/getting ready excuse. If I don’t get my booty up to work out in the morning, I will almost never do it at night simply because it’s a pain to get all cleaned up! If I get up and do it in the morning, I only have to take one shower, put on make up one time, put on clothes one time, etc, etc. It’s easy to justify, but bad if you sleep through that alarm clock more than a couple times a week since I won’t get my exercise in that day.
