Hey everyone! Sorry it’s been so long since I’ve been around. I sort of decided to just enjoy the day today and give the camera a little break.
Jay and I had a nice little Sunday, complete with a delicious breakfast, some coupon clipping, an afternoon of football and snacks spent with friends, and then a delicious dinner…which was ready and waiting for us in the crockpot as soon as we got home.
Gosh, I really, REALLY love my crockpot.
Tonight’s recipe for Balsamic Chicken came courtesy of my latest semi-addiction, Pinterest. I don’t really know how I came across it, but I do think I may actually be starting to get a hang of the whole “pinning” thing. I was also pretty impressed with the fact that I decided to actually make one of my “pins” so quickly. Usually I just end up bookmarking recipes and then forget about them…
The recipe came from Skinny Crockpot, which may also now be one of my latest obsessions. I swear, I’m going to start putting this contraption to use more often. I followed the recipe almost exactly, but I substituted 3 tsp. of minced garlic for the garlic cloves.
The chicken was not only full of flavor but was so moist that it practically fell apart with the touch of the fork.
I served our Balsamic Chicken over some whole wheat thin spaghetti, which made for one heck of a delicious dish. Plus, it’s healthy, too…it’s a win-win!
(And we’ve even got leftovers, too. Saweeeet.)

Not long after we sat down for dinner (in the living room at our TV trays, because we’re super fancy like that) somebody wanted to play.
I’m telling you, his special radar is always right on target with our dinners, especially if we’re eating in the living room.
We played fetch a couple of times, which I figured that would be enough to keep him happy, but he was relentless tonight.
And definitely would not take “no” for an answer. Can’t you tell?
So we played a bit more, and had a few good laughs as he was flying through the air.
But I think we must have tired him out…what do ya think?

My fiance is all set up for his Jets game!! It is fun because I am a Giants fan.. so we’ve got that rivalry going on all the time! Although I am hurtin’ after todays game. Better luck to the Jets.. I am a pure New York fan at heart.. and as long as the Jets aren’t playing the Giants… I will root for them!

The best part of my weekend was not doing a thing. For real – we had no plans. I took the time to catch up on housework, blogwork, and couch time.

My mother-in-law recently gave me a crockpot that I’ve been dying to break out. It is so nice to have dinner just waiting on you! Your chicken dish looks YUM!

Hope studying is going well for you- I was JUST thinking about you the other day- totally meant to comment..but I haven’t been reading ANY blogs lately (let alone writing anything)- I have just been SO busy studying that I have ZERO free time..& no social life- haha :) Thank goodness it will all be over Monday night..and i will be a very happy person :) BUT I just wanted to say that I admire your ability to study, work & blog all of the time- you are a rockstar!!
