Weekend Recap: A Huge Weight Has Been Lifted!

Good morning to you all! How’s it going so far today?

I’m going to be honest…it’s almost 9pm on Sunday night as I’m sitting to type this out and I’m a little pooped AND trying to pay attention to the Grammy’s, so today’s post may go a bit quick. Then again, it may not…we’ll see where it takes us!

Let’s start with Friday night…basically a combination of all of the best things ever.

We ordered takeout from DeFazio’s, popped open a bottle of wine, and caught up on some TV, including Thursday night’s episode of The Blacklist. OMG, do any of you watch that show?! The suspense is killingggg meeee…what happened that night?!?

Saturday morning started with some delicious egg sandwiches for breakfast, and then we were off to soccer for the little one.

Jay and I decided to take two cars to soccer so I could just leave right from there to take care of the grocery shopping for the week (I knew once I got back home I wouldn’t want to go back out again!).

I think we should be good to go for the week!

A little bit of Saturday afternoon was spent in the kitchen…I whipped up a batch of my favorite Banana Oatmeal Chocolate Chip Cookies, and immediately put half in the freezer. For whatever reason, I love eating them frozen!

I modified mine slightly, subbing in almonds for the walnuts (hate walnuts…), and did about half raisins/half dates. They are super tasty, and I’ll be happy to have these for snacks during the week.

Saturday night was pretty tame, not much going on. We made dinner, and then ended up starting to watch Breaking Bad on Netflix.

I think the show will be pretty good, but I think I’m having a bit of a hard time totally getting into it. Any other thoughts on the series out there??

We were able to sleep in a bit on Sunday (til almost 8am!), and shortly after waking, there were some delicious omelets made, courtesy of the husband.

Mine was made with two eggs and filled with spinach, peppers, onions, tomatoes, and cheddar cheese. Gahhh, why don’t I make eggs more often?!

After breakfast, Jay went out to shovel the driveway in anticipation of the extra snow we’re getting (oh my god, make it stopppp) and Lucas was obsessed with watching out the window. He’d sit, stand, sit, knock and bang on the window shouting “Da DAAA!”

While Lucas took his nap, I did my workout for the day (this old circuit workout – another good one!) and then Jay and I continued working on the basement that we had started on Saturday. I already told you guys that this was our main goal this weekend, and I am happy to report that we made some HUGE progress.

We got almost a solid hour and a half of working in before Lucas woke up, but thankfully, we had just about all of the crap out of the way at that point, so he was able to come down and hang out with us while we worked. Then again, he wanted right in on the action, too…

So do you guys remember what the basement looked like a few weeks ago? Well, here’s our “not totally done, but we’re getting there” after…

And we’ve even got a great little spot carved out for our workouts. So excited!

We still have a lot of stuff that we need to get rid of, but we’ve got most of that organized and to the sides so that the room is a bit more functional. And, we’ve got some of Lucas’s rotated toys set up down there, so it’ll be an extra spot for him to play.

I can’t even tell you how GOOD it feels to get so much accomplished down there this weekend! It’s like a huge weight has been lifted from my shoulders.

But for now…I think it’s about time for me to wrap things up so I can get to watching these Grammy’s. I’ll catch you guys later on – have an awesome week! Smile

Weekend Projects + Super Salads

Well, this has certainly been quite a weekend. Not only have Jay and I managed to have a ton of fun, both Friday and Saturday, but we’ve also been pretty productive around the house, too.

This weekend, we were actually supposed to be away in Wildwood but we had a few changes in plans and didn’t wind up going. So we figured we should take advantage of our free time this weekend, since we don’t really have one now until October maybe? My goodness.

So one of our Jay’s projects this weekend? Pressure washing the pool area.

Believe it or not, Jay used the pressure washer to spell “Hi” in that photo above.

The pressure washing actually took place yesterday, but I managed to keep myself busy. I managed to squeeze in a great walk, did some cleaning, a little baking, and also did a little tending to the garden.

Unfortunately, we’ve got bad news on that front. Remember a couple weeks ago when I said we had a ton of green tomatoes just waiting to turn? Well, they’re slowly turning…but then something is eating them.

I found a ton of half eaten tomatoes on the ground of the garden, and three out of the four plants have clearly had the tops eaten off of them. Damn deer.

I’ve been tossing the rotten ones into our fire pit for whenever we have our next bonfire. Winking smile

Thankfully, the whole garden isn’t at a loss, and I was still able to manage to find a few winners.

Oh, and we finally realized the pepper plants we have are red…the key is to pick them when they just start to turn and then let them fully ripen(?) on the counter inside. They are so sweet and so good.

Another thing with the garden? My basil plant is OUT OF CONTROL.

Seriously, I’ve never seen anything like it. There’s no way I’m going to be able to use it all up, so if anyone local wants some, I’ll gladly send you along with a big bunch!

Today’s projects were tackled both inside and outside. I wound up getting the urge to clean our basement. Sadly, I can’t even remember the last time I really bothered to clean it…it was BAD.

Now things are lookin’ (and smelling) nice and clean, and the bar is ready to be used. Who wants to come and join us for a drink? Winking smile

While I worked outside, Jay continued working on our back deck demo.

We’ve still got a ways to go, but we still have about three more weeks until our new siding comes, so we have some time.

Eventually, it was time to get to work on some dinner.

Oh, that’s right…this is supposed to be somewhat of a food blog.

Earlier today I took care of the grocery shopping and wound up picking up a couple of london broil’s (buy 1 get 1 free at Price Chopper!). One went into the freezer and one got a little marinade treatment, courtesy of hubby. I’d been looking forward to some steak ALL day…I don’t know what my deal was, but I couldn’t stop thinking about it!

Maybe it’s because I knew I wanted to do this with it?

I opted to serve my steak on top of a huge, veggie-filled salad, complete with romaine, spinach, cucumbers, tomatoes, grilled corn on the cob (cooked on the grill while the steak cooked), red peppers, beets, red onion, and feta cheese.

You guys. This salad…it was sooooo good.

On the side, I served up the last of our naan bread; a perfect accompaniment.

Now Jay and I ready to relax and lay low for the rest of the evening…it’s been a busy day, and busy (but awesome) weekend.
