Happy Sundayyyyy! Do all of you have your meal plans ready to go for the week ahead? Well, if not, I’ve got some yummy ideas to share with you all from our meals last week. They were all standard classics for summer…quick, minimal cooking, easy, and delicious, of course!
Here’s a look at what we ate last week…
Sunday: Cheeseburgers with corn on the cob and potato salad
Monday: Homemade Reuben sandwiches with french fries and side salads
My mom makes some KILLER reubens!
Tuesday: Chicken fajita quesadillas
Wednesday: Homemade crockpot french onion soup with side salads
Thursday: A delicious bowl of cereal (Quaker Oatmeal Squares + Love Grown Foods Mighty Flakes) with almond milk
Friday: Two-egg omelet made with Swiss cheese and tomatoes, plus cucumbers and tomatoes on the side.
I was on my own for dinner and ate earlier in the evening with Lucas…and then when my dad and Jay got home from their softball game, we made a plate of nachos and devoured those.
Nacho chips + chili with no beans + shredded cheese + fresh tomatoes added after cooking? AMAZING.
Saturday: Takeout sushi! <3
And there ya have it! I have absolutely NO idea what’s in store for us this coming week in terms of meal planning because we still are unsure of when are closing is going to be for our house (should find out tomorrow, hopefully)! So we shall see what happens. But what about you guys? Any good meals on the agenda for this week or last? Feel free to share!

We had sushi this week too. Some other delicious things were: homemade rotisserie chicken, Asian stir fry with salmon cakes, steak salads, burger in a bowl, bison chili, grilled chicken caprese salads and blt chicken salads at lunch. So yum!
I also made a killer banana bread granola complete with Chia seeds and LOTS of crispy, sweet clusters!
