Hey guys! Happy Monday! Did you guys all have a great weekend?
I know we did. It was busy, but it was awesome and we not only got a lot accomplished, but we also managed to squeeze a great date night in too. So I’ll get right to it, since there’s a bunch…
We’ll say my weekend was close to being started on my lunch hour on Friday when I found myself amongst the racks at Old Navy.
Found a few good deals not only for myself, but also for Jay and Lucas. I’ll have to share with you guys soon…as of right now, they’re still all sitting in the bag on my bedroom floor. Whoops.
On Friday night, once we put the little man to bed, it was time to get to work. Unfortunately, the amount of daylight happening these days was just not cutting it for us, so we had to work in the dark. With spotlights.
We were actually working on staining our deck, which was just as tedious and not fun as it sounds. And it was cold. Blech.
By the time I finished, I was more than ready for a snack, so I came inside and made us some chocolate chip cookies (from refrigerated dough, I’m not that crazy) and some hot chocolate with Bailey’s and marshmallows. It was soooo good.
Oh, and Cody says hi.
On Saturday morning, I was finally starting to feel more like myself and I really wanted to attempt a workout, but I didn’t think a T25 was in the cards. Instead, I thought I’d try “easing back in” to working out by trying out a PiYo workout (I’m borrowing the DVD’s from a friend at work).
Ummm, there was no “easing” back in to things. That workout was intense! But I soooo loved it. And now I’m kinda torn as to whether or not I want to start up the PiYo program or continue on with the T25 gamma workouts. Maybe a mix of both? Gahhh, I don’t know.
Lucas and I hung out together for the rest of Saturday afternoon since Jay was out. When we ran out of fun toys to play with and things to do at home, we headed out to do a little shopping. I happened to find these babies while we were out, too.
And I’m not gonna lie…I’m kinda bummed Lucas likes them. I was secretly hoping he wouldn’t. Bahaha.
I also, surprisingly, found some time to paint my nails while Lucas napped with a new Essie color I picked up.
Definitely liking this for fall.
Come Saturday evening, it was date night!
Jay and I had plans to meet up with our friends Kanika and Shaheen for drinks and dinner but we got there a little early so we grabbed a couple of seats at the bar.
Our reservations were at Tala Bistro, which was the first time we’d had the chance to go, but we were both super impressed and loved the atmosphere.
Eventually our pals joined us and we got our table.
We just love these two and their adorable little daughter.
We decided to get a few different appetizers to share, including wings, edamame dumplings (OMG), a pizza, calamari (amazing, seriously), and some oysters.
Yeah, I’m not usually one for oysters, but somehow I agreed to trying one. I blame the wine.
But I still stand by my original thoughts…I just don’t understand ‘em. If you just swallow them whole and add cocktail sauce (which is all it tastes like), why pay for them? I don’t know, I’m sure many of you think I’m crazy. And I’m not denying that.
For dessert, we decided to share this s’mores flatbread specialty pizza that they had.
It was good, not amazing.
And it wasn’t until we were leaving the restaurant (we were actually the last people to leave!) that we realized they had the outdoor patio with fire pits and couches.
We were so bummed we missed out, so we had to make sure to squeeze in a few minutes before we left.
Seriously, an absolute blast of a night with those two!
Sunday started with pancakes.
And some cuddles with the furball (they’re both getting pretty good around each other, but I wouldn’t call them friends).
Sunday afternoon we headed over to Lucas’s new babysitter’s house for a little “Open House” with the other couple of families, which I thought was so great.
I can’t remember if I’ve mentioned it, but our old sitter wound up getting another job so we had to find a new one. Thankfully, everything fell into place perfectly, so now Lucas goes to another sitter who happens to live about 5 minutes down the road from where I work. It’s perfect. And he’s doing so, so well there!
But last, since this post is getting ridiculously long, I will leave you with an amazing dessert that I had the chance to experience at the Open House.
They are funfetti cake bites…and they are freakin’ delicious. Our friends Rachel and Mike brought them (such a small world…we’ve known them, and now they bring their son to the same sitter!) and she told me that they were SO easy to make.
- Prepare a box of funfetti cake as described on the box (in a 9×13 pan)
- When still warm, scoop into a bowl and add 1/2 a large jar of Fluff
- Roll into balls, chill in the fridge
- Stick balls with toothpicks and dip in melted white chocolate. Chill until chocolate hardens and enjoy your socks off.
They were exactly like eating funfetti batter. But better. Aaaand, you’re welcome.
WHEW, I need to start taking it easy on these weekend posts…that’s all for me, my friends. I’ll check in with you all later with some more fun stuff on the horizon this week!

What a fun weekend! I love that nail color – haven’t painted mine in so long. I haven’t had the yo toddler ones, but when I was a nanny, I would sneak bites of the yo baby yogurt. OMG that stuff is good!
Stacie @ SimplySouthernStacie says

I’m right there with you on the oysters. The texture is like a big ‘ol loogie…gross. I think most people eat them for the whole aphrodisiac effect but there’s pretty much nothing about them that’s gets me in the mood.
I love that nail polish- it’s perfect for fall! I’m not so sure I could pull it off with my pasty skin tone but it looks great on you.
Lauren @ The Bikini Experiment says

I just finished 60 days of PiYo. I LOVED it especially the sculpt workout. You should do the full program! It’s amazing how much your body can transform without any jumping or running. I’m a huge fan of Chalene! Let me know what you decide to do!
Sam @ Better With Sprinkles says

I freaking LOVE PiYo!!!!! I’ve been doing it for almost 90 days now and have seen such a change in my body! Do it! You’ll fall in love. Promise. ;)
Courtney says
Gahhhhh, now I realllllly want to! That sounds so awesome and I can definitely see how it could make major changes. I’m still a little sore from Saturday’s workout, and it was hitting on muscles that I haven’t felt in a LONG time!
Fiona says
Oh my god, I don’t get oysters either! We tried them on our honeymoon in boston and I was did NOT get why people were obsessed with them! It’s like umm all I tasted is cocktail sauce, which is amazing but is that really the point?
Looks like you had an awesome and busy weekend! Love the recap!
I guess you could do one week T25, one week Piyo? I will have to try both one day tough I’ve heard so many conflicting feelings about Piyo!
Have a good one!
Courtney says
Oh really? What have you heard about PiYo? I’d love to hear whatever conflicting things you’ve heard!
Fiona says
I had just recently read a blog post from a gal who tried it with the Shakeology experience and didn’t find it THAT difficult but again everyone is different and it all depends on what you’re using the workout for….it was just an interesting read…but again to each their own and if it’s working for you THAT’s what matters!
